A favorite summer recipe, grilled corn on the cob amped up and turned into this light and healthy Grilled Chili Lime Sweet Corn Salad. It’s an easy corn side dish that is perfect for BBQs or even taco night!

Honestly, I’m just happy to be home!

The past couple of days have been a whirlwind! I went to Portland, OR this past weekend for an awesome blog retreat called Indulge! And believe me, everything about that weekend was “indulging.” If you are a foodie and looking for a place to go, Portland is your town. Not only did I “indulge” on food but had some great time with blog friends. I think thats my favorite part, I love meeting up hearing peoples stories and connecting with them on a heart level, thats not always the easiest to do on the internet!

After my Portland trip, I came back home for 24 hours and flew back out to West to Sacramento for a business trip with BestFoodFacts.org! I can’t wait to tell you more about that trip, let’s just say there was more eating involved from local organic farmers and some wine tasting. (yup… right up my alley) Then, less than 24 hours later I came back home!

Lots of travel, not a lot of down time. So… needless to say I’m glad to be home to be able to give my hubby a kiss and snuggle with my little guy! That IS the best birthday gift ever!

This Corn Salad Has All My Favorite Mexican Flavors

Now, I know normally on someones birthday you give them a cake. And you know what, it would have been smart for me to make a cake or dessert to celebrate my birthday – but my mind has been in the clouds (literally) and so … no dessert for you!

Instead you are getting something better!

Something better than dessert you ask? What could that be?

Well, this Grilled Chili Lime Sweet Corn Salad, that’s what! It has all of my favorite Tex-Mex flavors, incredibly light, healthy, and filled with mouthwatering flavor!

Grilled Sweet Corn Is One Of My Favorite Summer Foods

There is nothing quite like grilled sweet corn in the summer! Growing up in Wisconsin we use to eat this stuff all the time! It was “the thing” to get at the State Fair, well that and Cream Puffs. 🙂 The only hard thing about corn on the cob is the actual eating process. You know what I’m talking about!  Somehow one of those random little kernels manages to wedge its way in between one of your teeth and WILL NOT come out. So annoying. I decided to solve that problem with this salad!

This Grilled Corn Salad Is Perfect For Summer

It has the same great taste of grilled corn on the cob, and then some. I added smoked paprika (shocker.. hehe), chipotle chili powder for a little heat, piquillo peppers, fresh lime juice, cilantro, and a little queso fresco.

This salad will be the dish everyone is talking about at your next Summer BBQ.

This recipe serves a ton because, well, it will literally be gone in minutes so you need to make sure you have enough! Bon Appetite!

A favorite summer recipe, grilled corn on the cob amped up and turned into this light and healthy Grilled Chili Lime Sweet Corn Salad side dish!

Ingredients

  • 10 ears of corns, shucked
  • 3 Dellalo Brand roasted piquillo peppers, diced
  • 3/4 cup fresh cilantro, diced
  • 1/2 cup crumbled queso fresco
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chipotle chili powder
  • 1/2 teaspoon sea salt
  • 34 tablespoons fresh lime juice (juice of 2 limes)
  • 2 tablespoons olive oil

Instructions

  1. Heat grill to medium high heat or 400 degrees.
  2. Place sweet corn on the grill and grill for 3-4 minutes per side until slightly charred.
  3. Remove from grill, using a knife cut kernels off the cob into a large bowl.
  4. To the corn bowl, add the piquillo peppers, fresh cilantro, queso fresco, smoked paprika, chipotle chili powder, sea salt, fresh lime juice, and olive oil.
  5. Toss to mix everything and serve!
