Well, you guys devoured my Asian Cucumber Salad Recipe. So I thought I’d make the original cucumber salad that everyone makes in the summer time, you know, the creamy one. 

My mom would make this every single summer, at least once a week because my brother and I would devour it. There was just something about fresh crisp cucumbers tossed in a sweet tangy cream sauce with fresh herbs and onions. And let me give you a hint, the onions are the key component to this dish… well besides the cucumbers. The onions give it so much flavor!

What you’ll need to make this healthy Creamy Cucumber Salad:

  • english cucumbers
  • sliced red onion
  • greek yogurt
  • vinegar
  • honey
  • dill
  • lemon zest

How do you make creamy cucumber salad?

  1. To a small bowl add yogurt, vinegar, honey, fresh dill, lemon zest and salt. Whisk to combine everything until smooth.
  2. Add sliced cucumber and red onion to a large bowl. Pour yogurt sauce over cucumbers and toss to coat all of the cucumbers and onions with the sauce.
  3. Serve immediately or store in an air tight container in the refrigerator for 2 hours to let the flavors settle and then serve.

Can you make Creamy Cucumber Salad with Greek Yogurt?

Yes! Most of the time creamy cucumber salad is made with either sour cream or mayo, but greek yogurt can easily be subbed. It adds a nice tanginess to the sauce that really enhances the flavors.

Ingredients

  • 5 cups thinly sliced cucumbers
  • 1/2 cup thinly sliced red onion
  • 5.3 oz. plain greek yogurt
  • 1 tablespoon plain vinegar
  • 1 teaspoon honey
  • 1 teaspoon fresh dill, chopped
  • 1/2 teaspoon lemon zest
  • salt to taste

Instructions

  1. To a small bowl add yogurt, vinegar, honey, fresh dill, lemon zest and salt. Whisk to combine everything until smooth.
  2. Add sliced cucumber and red onion to a large bowl. Pour yogurt sauce over cucumbers and toss to coat all of the cucumbers and onions with the sauce.
  3. Serve.

Notes

* For best results let the cucumbers sit for 5 minutes to let them soak up the flavors from the sauce.

Store cucumbers salad in the refrigerator in an air tight container.
