Real Men Cook: Roasted Tomato Caprese Pasta

I have been craving, any and all things roasted right now. (if you couldn’t tell by my previous posts 🙂 ) When you roast anything it transforms the vegetable, fruit, aromatic, whatever into something absolutely delicious.

As I have been going through the latest and greatest Pinterest Pins I noticed that “Caprese” anything is really popular right now. For those of you who don’t know, Caprese is an Italian antipasto salad with fresh mozzarella, tomatoes, and basil. There are all kinds of recipes out there now: Caprese Grilled Cheese, Caprese Chicken, Caprese Sandwiches and the list goes on. I thought I would do a slight twist to the typical Caprese and make a Roasted Tomato Caprese Pasta.

The taste of the Roasted Tomatoes and Roasted Garlic in this dish will make your mouth water. It is absolutely delicious, especially with a nice crunchy piece of bread. The best part is it is easy enough for your hubbie to make. So enjoy a nice glass of wine and let your man cook tonight!

To get started, Preheat oven to 400º. Smash garlic and leave peel on. Place cherry tomatoes and smashed garlic on baking sheet and season with 1 T. of olive oil, salt, and pepper.

Place tomatoes and garlic in oven for 10-15 minutes, once finished peel garlic and mince. Set tomatoes and minced garlic aside.

Cut basil into ribbons. (pile basil leaves on top of each other, roll them up, and thinly slice.)

Halve the mini mozzarella balls.

In the meantime, bring a medium sized pot of water to a boil. Once boiling, place pasta in water.

Cook until al dente. (8-10 minutes depending on the type of pasta) Once pasta is done, take out 1/2 cup of the pasta cooking liquid and set aside. Drain the rest of the liquid. Place pasta, basil, mozzarella, minced roasted garlic, roasted tomatoes, 2 T. of olive oil, reserved cooking liquid, and salt in a large bowl.

Ingredients

  • 3 garlic cloves, smashed (leave peel on when roasting), minced after roasted
  • 2 pints of cherry tomatoes

  • 6 oz. fresh basil, sliced into ribbons
  • 12 oz. fresh mini mozzarella balls, halved
  • 1 lb. whole wheat gemelli pasta (penne or rotini would work as well)
  • 1/2 cup reserved pasta cooking liquid
  • 1 tsp. salt

    This was delicious (although I couldn’t get any fresh basil….I’m sad), but the cheese clumped. How do I get around that?

    1. Awesome Darcy so glad you like it, its even better with the fresh basil! One way around the cheese clumping is to let the noodles cool to past warm so that they don’t heat up the mozzarella and start to melt which in turn causes it to clump. Hope that helps!

    Hi! I’m looking for the calorie count on this if possible and also how much is one portion? My boyfriend and I are really making sure we are filling up healthy, but with as much flavor as possible.

      I just updated the calorie counts and nutritional information. There is 212 calories per serving of this and the portion size is 1-1 1/2 cups. 🙂
