A mouthwatering burger – made mini slider style – with creamy avocado, lean ground beef, balsamic caramelized onions, and salty pancetta! Its the ultimate slider!

I have been on a little bit of a sandwich kick lately, I guess my husband is starting to wear off on me. 🙂 But let me tell you.. its for the better.

Last week I shared with you my Grilled Portobello Burger with Balsamic Reduction, which is ridiculously delicious and a great vegetarian option for Meatless Monday!

I was thinking about them the other day, mostly because I was thinking of my waitressing days and the “Cowboy Burger” was one of the most ordered items on the menu. I will say, it is super tasty … just not the healthiest of burgers.

Ok, so, for those of you who don’t know, a Cowboy Burger is a ground beef burger with cheddar cheese, crispy bacon, tangy BBQ Sauce, and those yummy fried crispy onion straws. Sounds good… just SUPER heavy!

I decided to lighten this burger up a bit and make it for my man on Fathers Day! {awesome wife alert!}

HE LOVED IT! {and to be honest, I did too}

This lighter version is in mini form… aka “the slider” and fancied up a bit… hence the name “Gourmet Cowboy Hamburger Sliders”. 🙂

This burger is made with 93/7 lean ground beef, crispy pancetta {instead of bacon}, balsamic caramelized onions {instead of BBQ sauce and crispy fried onion straws}, and mashed avocado {because everything is better with avocado}.

Seriously, if words could describe how good these Gourmet Cowboy Sliders are then I would use them … but they don’t! You honestly just need to try them to find out for yourself. They will be one of the best burgers you have ever eaten.. hands down!

Description

These Cowboy Hamburger Sliders are topped with creamy avocado, balsamic caramelized onions, and crispy bacon. Always a crowd-pleaser!


Ingredients

Scale
  • 8 burger slider patties (premade or make them)
  • salt & pepper to season
  • 8 slider buns (brioche or hawaiian are best)
  • 1 tablespoon of olive oil
  • 1 large onion, halved and then sliced
  • 2 tablespoons of balsamic vinegar
  • 2 large avocado
  • 4 slices of bacon, cooked and halved
  • 4 tablespoons bbq sauce

Instructions

  1. Prepare Burgers: Season burger patties with salt & pepper on both sides. Set aside.
  2. Make Balsamic Onions: Heat a saute pan to medium-high heat, add olive oil to the pan, and then sliced onions. Season with salt and pepper. Saute for 7-10 minutes until the onions caramelize and turn slightly brown. Add balsamic vinegar to onions and saute for another 2-3 minutes. Remove onions from the pan.
  3. Make Avocado Mash: Add avocados to a bowl and mash until smooth. Set aside.
  4. Grill Time: Heat the grill to medium-high heat, about 375°- 400°F. Place burgers on grill and cook burgers for 2-3 minutes per side then remove. Grill buns for 1 minute per side and remove.
  5. Assemble Burgers: Start with the toasted bottom bun, mashed avocado, burger, caramelized onions, bacon and drizzle of BBQ Sauce.
