Grilled Lamb Burgers with Feta & Cucumbers

Grilled Lamb Burgers with Feta & Cucumbers

Are you like me? Do you have a pile of cookbooks and food magazines in your kitchen?

Every month I get a new magazine to add to my magazine collection and this past week I realized it was starting to get out of control. It was time to clean house, literally. So I pulled my ridiculous pile, sat down on the couch and started sorting.

I had magazines from 2012 in there .. and honestly I haven’t touched them since I put them in that pile!

As I was sorting, Cason (or at that time my Captain America Pirate – his own costume combo) walked up to me, pointed to a magazine that was piled under a couple of other magazines and said. “Mommy, we watch that show. Thats Bobby Flavor”

Bahaha… Mike just looked at me confused. I was in shock and secretly proud!

Little man had recognized Bobby Flay or as he calls him “Bobby Flavor” from a picture on the magazine.

Ever since he spotted that picture and saw my excitement, he keeps asking me to watch Bobby’s Grilling Show on tv. I love it! But most of all I love that he sits with me, without protesting or asking to watch Jake and the Neverland Pirates or Daniel Tiger. To top it off he will ask me what Bobby “Flavor” is cooking. “Mommy, whats that?” “Whats he making?”

What more could a food blogger ask for?

And might I say that his name for Bobby, “bobby flavor” is quite fitting… he is the master of flavor! My child is a genius! 🙂 hehe

So in honor of Bobby and all things grilled, today’s recipe is a Grilled Lamb Burger with Whipped Feta and Cucumber.

These burgers were WAY better than I dreamed they’d be in my head! I was going back and forth about adding a sauce to these and decided not to. I’m so glad I did! The Balsamic Caramelized Onions (yeah, you remember those from the Wednesday post) replace the need for a sauce on these burgers. The Cucumber adds a nice crunch and some color and the whipped feta.. well its just amazing! The Whipped Feta Cheese has fresh rosemary and thyme in it to give a more greek feel and the ground lamb goes perfectly with all the flavors in here! OMG are they good!

Cason had two of them himself!

These burgers would for sure my Bobby “Flavor” proud! 🙂 hehe

Description

These Grilled Lamb Burgers with Feta & Cucumbers are filled with flavor and done in 30 minutes! Juicy burgers are topped with whipped feta cheese, cucumbers, and balsamic caramelized onions.


Ingredients

Scale
  • 1 lb. ground lamb
  • salt & pepper to taste
  • 6 whole wheat slider buns
  • Balsamic Caramelized Onions
  • 1/2 cup sliced mini cucumber {about 1 mini cucumber}

Whipped Feta:

  • 1 garlic clove
  • 1/2 cup crumbled feta cheese
  • 3 oz. cream cheese, softened
  • 1 teaspoon of chopped fresh rosemary
  • 1/2 teaspoon of chopped fresh thyme

Instructions

  1. Make Balsamic Caramelized Onions, set aside.
  2. In a food processor add crumbed feta cheese, blend until it resembles powder.
  3. Next add garlic clove, softened cream cheese, fresh rosemary, and fresh thyme to feta cheese. Blend mixture until smooth. Set aside.
  4. Form ground lamb into 6 equal small slider patties. Season both sides with salt and pepper.
  5. Heat grill to medium high heat or 400 degrees.
  6. Add lamb burger to grill and cook for 3-4 minutes per side. Remove burgers from grill.
  7. Toast slider buns for 1 minute.
  8. Assemble lamb burgers: bottom bun, 1-2 tablespoons of whipped feta, lamb burger, 3 slices of mini cucumber, 1-2 tablespoons of balsamic caramelized onion, top bun.
  9. Serve and devour!
