Quick and Easy Side Salad Recipe
I hope everyone had an awesome Easter Weekend! That you had lots of ham, lots of chocolate, and lots of sweet times with family.
Our weekend turned out to be pretty eventful. Mikes old college roommate came into town Friday morning and we ended up going to the Shell Houston Open all day. (the Shell Houston is a golf tournament for those of you who don’t know) We had a blast but came back exhausted! Saturday, my brother came over and we revamped the landscaping in our backyard.
By “we” I mean my brother and I because my husband is still the one-armed man after surgery. When I say “revamping the backyard”, I mean complete overhaul of all dead things planted! Let’s just say I don’t have the greenest of thumbs and my brother works as a landscaper full time so his “expertise” is very much appreciated!
Now, I have a beautiful backyard and some fresh herbs and pepper plants coming my way soon. 🙂 (Thank God for built in sprinkler systems!) Then, of course, Sunday came and we spent time with my husbands side of the family. All the little cousins got to play together for a little bit and then it was time for Mike and I to head out and prepare the casa for my parents who were coming into town. (today!) So… long and eventful weekend indeed. What did you do? Was yours as eventful as ours?
Now, as Easter has come and gone and Spring shows her pretty little face I thought a light and refreshing salad would do just the trick for today’s recipe. (plus, it might clear out all the “not so good stuff” you might have inhaled over the weekend… but I know you didn’t do that.. right?!?) I hope you enjoy this delicious and light Simple Spinach & Arugula Salad as much as we did. It is so stinking easy it might just be your go to salad. 🙂
How to Make this Simple Spinach & Arugula Salad
To get started, rinse 8 oz. of spinach & arugula mix (you can get it at any grocery store, or make your own mix… whatever suits your fancy.) Put the rinsed spinach and arugula in a medium sized bowl, squeeze juice of 1 lemon over the greens.
Add 1 T. of olive oil over the greens.
Add salt & pepper. Toss to coat.
Top with 1/4 cup of shredded parmesan cheese and serve it up! 🙂

Arugula is my favorite green! I love the bite that it gives any salad! You know, oftentimes, simple is best, and this is no exception!
