A light Strawberry Spinach Salad that refreshes during these warm summer months. A delicious salad recipe with strawberries, candied walnuts, and a red wine vinaigrette.

My husband is a huge Spinach Salad fan! So, I thought since its “Real Men Cook” dayย {1st Friday of every month} why not have him make something I know he likes! {i know, I’m such a sweet and thoughtful wife.. hehe}

Believe it or not, this Strawberry Spinach Salad is one of the first salads I had when I moved to Texas. We were invited to some friends house when we first moved and they had this Strawberry Salad. I have since made a few adjustments to the salad, but the general idea of Strawberries and Salad is still there. The dressing to this light salad is also rocking! It is a Red Wine Vinaigrette, and I could literally just drink it from the bottle. I have to remember to “lightly sprinkle” when dressing my salad otherwise it ends up soaked. Oops. I actually make this Strawberry Spinach Salad quite frequently during the summer months because it is easy and refreshing. Plus, it is pairs perfectly with my Pecan Crusted Chicken!

Alright Men, let’s get to it! {or ladies print off this recipe for your man:)} I’m not even going to say “I hope you enjoy”, because I KNOW you will love it!

To get started, hull {remove top} 16 oz. of fresh strawberries and slice.

Farro & Strawberry Salad 3

In a medium size skillet add 1 1/2 cups of walnut pieces along with 1 1/2 Tablespoons of sugar. Saute at medium low until sugar has melted and coated the walnuts.

Strawberry Spinach Salad 1

Remove immediately {so as not to burn} and spread out on a plate or parchment paper to cool down. In a small bowl, mix together 2 minced garlic cloves, 1/4 cup of sugar, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.

Next add 1/2 cup of red wine vinegar and 1 cup of canola oil.Whisk until thickened and all ingredients combined.

In a large bowl, add 10 oz. of fresh spinach, sliced strawberries, candied walnuts, and 1/2 cup of shredded Monterrey jack cheese.

Leave dressing on the side for each individual to add desired amount. ๐Ÿ™‚ {or to drink..haha}

Salad Ingredients:

  • 1/2 cup of shredded Monterrey jack cheese
  • 10 oz. of spinach

Dressing:

  • 1/2 cup of red wine vinegar
  • 1/4 cup of sugar
  • 1 cup of canola oil
