These steak gyros are inspired by a childhood favorite of mine. Growing up, my family was always on the move. We were either going to my volleyball practice or to my brother’s soccer practice and sometimes to both. Honestly, I don’t know how my parents did it! With all the hustle and bustle, quick family-friendly meals were a must and one of my favorites was gyro night! My mom would pick up sliced lamb meat and a container of tzatziki sauce, then I would set up shop and go to town.

Now that I’m all grown up, I get to make my own take on things, so I’ve swapped the lamb with steak in this gyros recipe. (I also make Greek turkey meatball gyros!) Tender, juicy steak is rubbed with a Mediterranean spice blend, then seared to perfection and placed in a toasted pita topped with homemade tzatziki sauce. I’m drooling just thinking about it!

Grilled Steak:
- New York strip steak – While there are many options, I used New York strip because I didn’t want as much marbleization as a ribeye and wanted it a little more tender than flank steak.
- Mediterranean spice blend – Adds warm, herbaceous flavor.
- Avocado oil – Helps the seasoning stick.
Tzatziki Sauce:
- Plain Greek yogurt – You can use full-fat or lower fat varieties.
- Grated cucumber – Grating it means it practically melts into the sauce.
- Lemon juice – Use freshly squeezed juice, not bottled, for the best flavor.
- Dried dill – If you happen to have fresh dill on hand or in your garden, you can swap that in.
- Garlic powder – Adds savory flavor without the sharpness of raw garlic.
- Salt – To season the sauce.

How to Make Steak Gyros
This recipe comes together in a few easy steps.
- Preheat the grill. Heat your grill to medium-high, about 375–400°F.
- Season the steak. Rub both sides of the steak with the Mediterranean spice blend and avocado oil.
- Prep the grill. Make sure the grates are clean and lightly oiled.
- Grill the steak. Place the steak on the grill and cook for 4–6 minutes per side, depending on the thickness and your desired doneness.
- Let it rest. Remove the steak from the grill and let it rest for 10 minutes before slicing.
- Make the tzatziki. In a bowl, mix together Greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt.
- Slice and assemble. Thinly slice the steak, then layer it onto flatbreads with red onion, cucumber, tomatoes, and a generous spoonful of tzatziki.

Tips for the Best Gyros
These tips will help you get the best flavor and texture out of your steak gyros!
- Let the steak rest. The same rule that applies to any other meat applies here too! Resting helps the juices reincorporate into the meat before you slice.
- Cut against the grain. This makes the steak easier to chew.
- Warm the flatbread. Not only is warm flatbread more appetizing, it’s also less prone to tearing when you wrap everything up. I like to put them on the grill grates for a few seconds on each side so they’re warm and just slightly charred.

Ingredients
Grilled Steak
- .75oz – 1lb new york strip steak
- 1 teaspoon Mediterranean Spice Blend
- 1 tablespoon avocado oil
Tzatziki Sauce:
- ½ cup plain greek yogurt
- ¼ cup grated cucumber
- 1 tablespoon lemon juice
- ½ teaspoon dry dill
- ½ teaspoon garlic powder
- salt to taste
Gyro Components
- 4 flatbreads
- 1/4 cup thinly sliced red onion
- 3/4 cup sliced cucumber
- 1/2 cup halved cherry tomatoes
Instructions
- Heat grill to medium high heat, approximately 375-400 degrees F.
- Season both sides of the steak with Mediterranean Spice Blend and avocado oil. Rub in to the steak.
- Make sure grill grates are clean and rub down with olive oil soaked rag or spray with cooking spray.
- Place seasoned steak on the grill. Grill each side for 4-6 minutes depending on the thickness of the steak and your desired doneness. Remove steak from grill and let sit for 10 minutes.
- While the steak is resting to a bowl add yogurt, grated cucumber, lemon juice, dry dill, garlic powder and salt. Stir together and set aside.
- Slice the steak and start to assemble gyros. Evenly distribute steak, sliced red onion, cucumber, cherry tomatoes and tzatziki sauce on each flatbread.
