Easy Crock Pot Broccoli Cheese Soup

An Easy Broccoli Cheese Soup Recipe

You know you’ve ordered it. The ever famous Broccoli Cheese Soup from Panera Bread. We all have. It’s one of my favorite soups to get there and when I was pregnant with Maddie it definitely helped settle the nausea. 

When it comes to “fall,” soups are on the weekly meal plan at least once a week. 

  1. Soups are super easy to make.
  2. They last at least two meals. (in our family of four)
  3. Always a hit. Meaning I usually don’t have a complainers.

Ingredients You’ll Need to Make this Broccoli Cheese Soup:

  • Broccoli
  • Cauliflower
  • Garlic
  • Vegetable Broth
  • Fresh Thyme
  • Milk
  • Cheese

How to Make Broccoli Cheese Soup in the Crockpot

  1. To a crock pot, add cauliflower, broccoli, garlic cloves, fresh thyme, salt, pepper and vegetable broth. Stir to mix everything together.
  2. Cover and cook on HIGH for 2-3 hours.
  3. Add half of the mixture to a blender along with milk and puree until smooth. Pour the blended soup back into the crock pot with remaining mixture and add in the cheese. Using a wooden spoon, stir until the cheese is melted.
  4. Serve. (optional: garnish with a little cheese and chopped green onions)

How to Make Broccoli Cheese Soup Low Carb

To make this easy crock pot soup recipes low carb I omitted a few ingredients that typically add to the carb count.

  1. Onion
  2. Carrots
  3. Red Pepper

While all of those ingredients are “real ingredients” they do have carbs, so if you’re on a low carb or keto diet this soup will fit the bill.

Can You Freeze Broccoli Cheese Soup?

Most soups with a cream or dairy base tend to separate or change texture and consistency when thawing. While you can freeze this broccoli cheese soup by placing it in an air tight container, will last 2-3 months in freezer. Please keep in mind that the cream may separate when thawing. So I recommend you not freeze it.

Honestly, you won’t want to freeze this soup. It is so good you’ll want to finish it in one sitting. We like to top ours with a sprinkle of shredded cheese (because you can’t go wrong with more cheese), chopped green onions and a dash of smoked paprika. The paprika adds that nice little hint of smokiness but it is totally optional. Our family will just put paprika on any and everything. 

The cauliflower in this soup makes it extra creamy! So just roll with it, trust me you’ll love it! I cannot wait to hear what you think of this one. Talk about quick easy dinner ideas? You can’t beat this one, and the flavor is on point!

Ingredients

  • 2 cups cauliflower florets
  • 4 cups broccoli florets
  • 3 cups vegetable broth
  • 3 garlic cloves, minced
  • 45 sprigs of fresh thyme
  • salt & pepper to season
  • 1 cup 2% milk
  • 8 oz. shredded cheddar cheese

Instructions

  1. To a crock pot, add cauliflower, broccoli, garlic cloves, fresh thyme, salt, pepper and vegetable broth. Stir to mix everything together.
  2. Cover and cook on HIGH for 2-3 hours.

    This soup looks soooo good! If I wanted to make it vegan, what would you suggest I use to replace the milk? I think I could sub the cheese for vegan cheese. Just not sure what would be the best substitute for the milk. Thanks!

    1. You could use unsweetened almond milk, oat milk or coconut milk. Just be careful with the coconut milk because it might be sweeter so you’d need to add salt or acid like lemon to the soup to balance the sweet.

    1. I have no idea without trying it. Sometimes when I feel like something is lacking I’ll add a little more salt or lemon juice to brighten it up.
