Easy Smoked Salmon Cucumber Tea Sandwiches

Whew! Gosh y’all I’m exhausted and quickly realizing that we did not plan the return portion of our trip back home very well. Mike and I got in from the Bahamas at 1:00am Monday morning. We were suppose to land around 11:45pm Sunday night (still not great planning) but our flight was delayed again and then the drive back home had us opening the door around 1am. Normally that would be borderline when it comes to getting things going the next day. But when we got home I found out Maddie was sick coughing and that she was upstairs with my mom. So I went up to relieve my mom from “duty,” sent my parents home and took over. I finally crawled into bed around 2:30am.

So all that to say. No post for you on Monday but you do get one today. And it’s a good one. My 6 year old son loved them!

Did you know that one of the more popular recipes on my blog is Cucumber Sandwiches? I actually got the recipe from my mom. Whenever there was a party, and she had to bring an appetizer these cucumber sandwiches were it. And truth be told, they disappeared in minutes!

With Mothers Day and Easter coming up I thought these Smoked Salmon Cucumber Tea Sandwiches would be the perfect thing to make! They are easy, take less than 15 minutes to assemble and the perfect flavorful bite!

What are tea sandwiches?

Tea Sandwiches are small sandwiches meant to be eaten at afternoon tea time. They can have a number of different toppings but should be easy to handle and meant to be eaten in 2-3 bites.

How many tea sandwiches per person?

When making tea sandwiches for a crowd. Plan to make 2-3 tea sandwiches per person.

Can I make tea sandwiches ahead of time?

You can make tea sandwiches ahead of time and store in the refrigerator with a loosely wrapped plastic wrap. But I don’t recommend it. The bread can either go soggy or tend to dry out, so I highly recommend making them the day of to keep them fresh and at their best!

What kind of bread should I use for tea sandwiches?

  1. Pumpernickel
  2. Whole Wheat
  3. Rye
  4. Sliced baguette or french bread that is a day old
  5. Cucumbers (if you want to go breadless)

With this recipe I decided to use Whole Wheat bread. I used a cookie cutter to cut out circle that were the same size as the cucumber itself, which made it look super cute. (I even saved some of the hole-y bread, you could make egg in a hole with it later) Once all the bread was cut, I spread a fresh dill garlic cream cheese over it, topped it with cucumber and some smoked salmon. That first bite is glorious because of all the different flavors and textures going on. I guarantee they will be loved by all.

Perfect for a baby shower, wedding shower, Mothers Day or Easter and most definitely an afternoon tea time.

Description

Light & Easy Smoked Salmon Cucumber Tea Sandwiches slathered with an herb cream cheese. These tea sandwiches are guaranteed to be a hit! Simple to make light, refreshing and perfect for Mothers Day, Easter or that next party! 


Ingredients

Scale
  • 21 slices of bread
  • 4 oz. smoked salmon
  • 6 oz. cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1 teaspoon fresh dill
  • 1/2 english cucumber, cut into 1/4″ slices (you need 21 slices)

Instructions

  1. Find a cookie cutter that is the same circumference as the cucumbers cut the bread into circles using the cookie cutter. Avoid cutting the crust.
  2. In a small bowl, add cream cheese, garlic powder and dill. Using a hand mixer blend all the ingredients together.
  3. To assemble: add 1/2 tablespoon of the cream cheese mixture to round slice of bread, top with a cucumber, then a portion of smoked salmon and garnish with fresh dill.
  4. Repeat process until all tea sandwiches are complete.
  5. Store in the refrigerator until ready to serve or serve immediately.
