One of my favorite things to make these days is Salmon. It has loads of healthy fats and a punch of protein!
Plus, the fact that every time I make it I get ridiculously praised by my son is also a major plus. “Mommy this is the BEST meal I’ve ever had. Can you make this more often!?”
Why, yes. Yes I can. Especially if it comes with adoration like that!
Usually when I’m in a bind I make my Honey Mustard Baked Salmon. It’s quite easy, less than 5 ingredients and super flavorful.
But when I’ve got some time I like to add a few components to my salmon and jazz it up little. Todays recipe is a Chili Lime Grilled Salmon topped with a Fresh Pineapple Salsa.
I made a quick spice rub for the salmon. The key to get it to stick is patting the salmon dry and then rubbing in the spice blend. This ensures that the spices will stay on the salmon during the cooking process and not fall off when they hit the grill.
Then I put the salmon flesh side down on the grill. Just make sure to spray the grill with cooking spray or rub down the grill grates with an olive oil soaked rag so the salmon doesn’t stick! I guarantee if you do that, you won’t end up with a salmon massacre on your grill.
Trust me!
Once the salmon is on the grill. Look at your watch and don’t touch it for 5 minutes. I repeat DO NOT TOUCH THE SALMON!
If you flip it too early it’s going to stick to the grill. The salmon proteins will release from the grill when they are ready. Don’t rush it. This again will guarantee that you have a perfectly grill salmon that stays intact.
Oh. And another hint, and this one I learned at the Austin Food & Wine Festival. If you season the skin of the fish with a little salt, when it’s grilled, the skin will come off super easy. (I tested it and it’s legit.)
Ok, so that takes care of the salmon portion.
Now it’s time for the Pineapple Salsa, which is my son’s favorite part. In his words, “it adds a nice sweetness to the salmon mommy.” He’s my little cooking savant.
To his credit, he’s right. The acid and the sweetness from the pineapple salsa helps cut through the fat of the salmon. It’s definitely a winner and a must make this summer!
Make it for the family or show it off at your next backyard BBQ. It’s Paleo, Gluten Free and only take 30 minutes to make, well actually 20 minutes if you really want to get picky. 🙂

Chili Lime Salmon with Pineapple Salsa

Ingredients
Chili Lime Salmon
- 1 lb. wild caught sockeye Salmon
- 1 teaspoon fresh lime zest
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ancho chili powder
- 1/4 teaspoon garlic powder
- salt to season
Pineapple Salsa
- 1 1/2 cups diced fresh pineapple
- 1/3 cup diced red pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 1/2 tablespoons fresh lime juice
- 1 tablespoon diced fresh jalapeno
- salt to taste
Instructions
- Preheat grill to medium high heat, about 375-400 degrees F.
- To a small bowl, add fresh lime zest, smoked paprika, ancho chili powder and garlic powder. Stir together.
- Rub on the spice blend on the flesh side of the salmon.
- Spray grill grates with cooking spray or rub down with an olive oil soaked rag.
- Place salmon skin side down first. Grill for 4-5 minutes. (do not touch it during that time)
- Flip the fish (fish should not stick to the grill grates, if it does then you need more cook time). Grill on flesh side for another 4 minutes. Remove from grill and let rest.
- In the meantime, to a medium bowl add pineapple, red pepper, red onion, fresh cilantro, lime juice, jalapeno and salt to taste. Toss everything together.
- Serve salmon filets with pineapple salsa
