Best Grilled Salmon Burger Recipe

Gah!!!! It’s burger week here at Joyful Healthy Eats and I’ve got all the feels. Burgers mean you’re grilling which means it’s officially summer. And at our house that it kinda the case, because Cason’s last day of school is this Thursday!

Today is the first of all the summer festivities, Memorial Day! Our plan is to chill out by the pool all day, grill and sip on refreshing cocktails because … well.. we can! I think what I love most about summers, even though it can be a little crazy with the kids at home again, is the “slow living” that occurs. There is no “we have to be here or there.” Everything just takes a break for the summer and things slow down, even the nights last longer. 

I absolutely loved summer as a kid and I hope that I can create that same type of excitement for my kids. So when you’re stressed out because the kids are destroying the house, pulling each others hair or pushing buttons. Just take a deep breathe, pour yourself a glass of Rosé, remember they are only little for so long and go make some burgers. Like how I did that? haha

Alright, let’s dive right into these Salmon Burgers, shall we?

Now, if I’m being honest. I’ve always been intimidated by Salmon Burgers. I thought you had to get them pre-made at the fish counter in the grocery store. I never thought you could make them at home. Well, Pinterest proved me wrong. As I was searched for different ideas of what to make Salmon Burgers popped up and wow are they easy to make!

How to Make Salmon Burgers?

  • Quality Fish: Salmon is an excellent choice because of the natural fat rich omega-3 fatty acids. The fat keeps the salmon patties moist, tender and helps with binding the patty together so you can form a burger. I highly recommend selecting your salmon at the fishmonger counter at the grocery store. Always smell your fish before purchasing it, it should not smell like fish. If it does, then it’s not fresh! So select a different fish. Use immediately. If it sits in the fridge even one day it starts to smell a bit.
  • Almond Flour: The almond flour in this recipe helps keep the salmon patties tender and stay together. The flour also absorbs some of the juice from the fish as it cooks and keeps it locked inside of the patty! Think of it kinda like a meatball, it does the same thing. Helps bind everything.
  • The Flavor: Salmon needs stronger tastes added to it to punch it up a bit! Think tangy mustard, garlic, shallots and fresh herbs can complement and enhance the flavor of these burgers!

How to Grill Salmon Burgers?

  1. Add cubes salmon, almond meal, shallots, garlic, dijon mustard, dill, lemon zest and and black pepper into a food processor or blender.
  2. Pulse the mixture and scrape down sides as needed with a spatula until the salmon is a coarsely ground. You want some small chunks, not a puree.
  3. Transfer the salmon mixture to a medium bowl and evenly divide into 4 burger patties. (about ½ – 1 inch thick) Grill right away or place patties on a plate and cover. Refrigerate until ready to grill.
  4. Heat grill to medium-high heat, approximated 375-400 degrees F. Thoroughly clean grates with a grill brush and oil!
  5. Place burgers on the grill and grill for 4 minutes covered, gently flip and cook 3 to 4 more minutes covered. The internal temperature should be about 130°F. You definitely don’t want to overcook these, they will be very dry. So follow the times. 🙂
  6. Once to temperature remove salmon burgers from the grill.

Salmon Burgers can definitely be temperamental, as in things can go bad fast, but if you follow the instructions you’ll be golden! The concept of carry over cooking when it comes to fish is not as common as it is with beef and pork. Keep an eye on the temperature, a cooking thermometer is key! As soon as the salmon patties get to 130 degrees F take them off the grill and let them rest before putting on the bun and devouring.

And believe me, you will devour these Salmon Burgers! Hands down the BEST I’ve ever had. Honestly. I know I’m bias and have to toot my own horn but they are absolutely amazing. My 7 year old devoured these.

The kicker to really bring out the flavor in these Burgers is the lemon garlic aioli. No, seriously. Salmon is so mild in flavor, so adding strong flavors really elevates the flavor of the dish. You can serve these Salmon Burgers on a bun or lettuce cup if you want to stick with gluten free. You’ll love them however you serve them!

Ingredients

Salmon Burgers

  • 20 oz. salmon filet, skinned and deboned (cut into cubes)
  • 1/4 cup almond meal (or almond flour)
  • 3 tablespoons finely diced shallots
  • 2 garlic cloves, minced
  • 2 tablespoons dijon mustard
  • 1 tablespoon fresh dill
  • 1 teaspoon lemon zest
  • 1/4 teaspoon black pepper

Lemon Garlic Aioli

  • 1/3 cup mayonnaise (I used Dukes for low carb)
  • 1 tablespoon lemon juice
  • 1 teaspoon course ground mustard
  • 1 teaspoon lemon zest
  • 2 teaspoons minced garlic clove
  • salt & pepper

Instructions

Lemon Garlic Aioli

  1. Add lemon garlic aioli ingredients to a small bowl, mix to combine.

Assemble

  1. To each burger bun add 1 tablespoon of the lemon garlic aioli, then salmon burger, avocado slices, tomato slice and red onion. Serve.
