So, it is too early for me to put up fall decorations? I mean we are basically almost in Mid-August, so that means its okay … right?

I absolutely love the fall! Growing up in Wisconsin, summer and fall where hands down my two favorite times of year. The summer weather was perfect – low to mid 80’s, cool breezes from the lake, sun shining down, cool nights. It was gorgeous. Then as we headed into fall the weather was about 60’s, so t-shirt and shorts kinda weather – although now that I’m a “texan” it’s coat weather!

My favorite part of the fall is the changing of the leaves! The bright oranges, the maroon reds, the golden yellows… its absolutely amazing. We use to live near Geneva, WI and driving from my house at the time out to Geneva was beautiful. It was a two lane highway with nothing but trees all around and in the fall it was like God was painting an incredible picture. Those were always the drives that I felt the closest to God. I LOVE looking at his nature – the sunsets, ocean water crashing against the rocks, the colors of fall – beauty is all around us! We just have to take the time to slow down and see it!

I think that’s why I love fall so much, the beauty of it reminds me to slow down and enjoy life! Well, that and I love the food in the fall! hehe

So, Why do I ask “is it okay to decorate for the fall?” Well part of it is, I have 2 big boxes of fall decorations in my attic that I’m dying to get down so I’m looking for your “stamp of approval.” And secondly, I was trying to brain wash you into the “fall spirit” by talking about all things fall so you’d be ready for the recipe coming at ya! Today’s recipe is a … wait for it … PUMPKIN recipe!

Yup, that’s right! You heard me correctly! Pumpkin recipe! … let the pumpkin madness begin. I really was trying to figure out when the best time to whip out the first pumpkin recipe of the year would be and you know what, that is now!

Sure it’s still 90 degrees outside. But you know what, that’s normal in Texas. So I figured there’s no better time than the present. I was craving pumpkin and chocolate … so .. viola YOU also get Pumpkin and Chocolate! You’re welcome!

They are moist, full of pumpkin flavor, with delicious bites of melted dark chocolate chips throughout. These bars are not overtly sweet, in my opinion they are the perfect balance! They are sweetened by applesauce and honey and of course the little bites from the chocolate hidden throughout the bars.

These Skinny Chocolate Chip Pumpkin Bars are super easy to make and great to have on hand. You could eat them for breakfast in the morning because its basically an oatmeal bar, a mid afternoon snack to wake you up during a long day of work, or for a late night sweet treat. They are so versatile.

They are good by themselves but if you want a little more “crunch” some pecans would be a great addition! I hope you enjoy!

A Skinny Chocolate Chip Pumpkin Bars Recipe, filled with fall spices, pumpkin puree, oats, and dark chocolate! All for only 107 calories a serving!


Ingredients

  • 2 cups regular rolled oats
  • 1/2 cup white whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup of unsweetened apple sauce
  • 1/4 cup unsweetened almond milk
  • 3 tablespoons honey
  • 1 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Grease 8×8 pan with PAM spray.
  3. In a large bowl mix regular oats, flour, cinnamon, baking powder, ginger, nutmeg, cloves, and salt.
  4. In a medium bowl add pumpkin puree, unsweetened apple sauce, almond milk, honey, and vanilla extract. Whisk together so.
  5. Add wet mixture to dry mixture, stir until completely combined.
  6. Add in chocolate chips, gently fold in.
  7. Add chocolate chip pumpkin mixture to greased pan.
  8. Bake for 20-25 minutes.
  9. Remove from oven and let cool, serve!
