For a four year old, Cason has quite the collection of LEGOS! Over Christmas, Nana (my mom) loaded him up with every Space LEGO she could find and then we gave him a couple Ninjago sets. I think we were putting together the sets for 3 days straight.

Well, last week there was a storm of kids that came through our house like a hurricane and every set that WAS built was destroyed. Leaving us with half put together space shuttles and ninja fortresses that were blown up!

I gave myself a mission. Put all the sets back together so my little man can play with them again!

Guys, I had no idea how therapeutic LEGOS could be. It’s actually kinda fun searching for pieces, putting them together and ending with a finished product. I am so proud of myself …. and feel so accomplished. I now understand the addiction to LEGOS!

Although, I could do without finding them all over my house and stepping on them! Ouch!

As I’ve been putting together Cason’s sets I’ve been listening to this new CD. It’s actually by our Pastor. He was a Worship Leader before he was our Pastor and has come out with a couple of CD’s. ๐Ÿ™‚

His most recent one is called Magnificent! And let me tell you, it lives up to the name!

One of my favorite songs is called “Hide Myself.” I have literally been listening to it on repeat.

2016 was a very hard year for us as a family. When January hit, I vowed, (not that I could change what happened) that 2017 would be different. No more hard things. Things that we have been waiting for would come to fruition. Business would be good. It would be the year of hope, of joy, and new things. The past week and a half has felt like 2016.

As I was sitting on floor putting together LEGOS of all things I started tearing up listening to this song.

I just needed to remind my heart to hide itself in the Lord. That in His arms, under His wings, in His presence there is peace. There is joy. Their is love. Everything is right when I’m with Him. My worries are gone. Fear cannot exist. As I let my soul soak in those truths it felt like every weight I was carrying on my shoulders was gone. Sometimes we just need to sit and be still in the presence of the Lord to be renewed and restored. ๐Ÿ™‚

Mike and I LOVE a good fish taco. The secret is all in the sauce and making sure you have just the right amount of cabbage “crunch.” You don’t want it too crunchy because then the fish gets lost! You want to be able to taste each and every flavor! And these Fish Taco Rice Bowls allow you to do just that!

I guarantee you’ll fall in love after the first bite. I know Mike and I did. These will definitely be a repeat meal!

Description

FISH TACO RICE BOWLS with avocado & pickled onions, topped with a Cilantro Lime Dressing! The perfect 30 minute meal to satisfy even the pickiest of eaters!


Ingredients

  • 1 cup uncooked brown rice
  • 1 3/4 cup water
  • 1.25lbs. mahi mahi, skin removed
  • 1/4 teaspoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon canola oil
  • 2 avocados, mash
  • 2 tablespoons lime juice
  • 2 cups purple cabbage, sliced
  • 1 cup of sliced jicama
  • 1 cup diced roma tomatoes
  • Picked Onions

Cilantro Lime Dressing:

  • 1 tablespoon red onion
  • 1 garlic clove
  • 1 cup fresh cilantro
  • 1/4 cup canola oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon of sea salt
  • pinch of ground cumin

Instructions

  1. Add water and rice to a microwave safe bowl and cover. Cook in microwave on HIGH for 10 minutes. Let sit to cool and then fluff with a fork.
  2. In a small bowl, add chipotle chili powder, garlic powder, smoked paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir to mix.
  3. Pat the fish dry and rub spice blend on both sides of the fish.
  4. Heat large skillet to medium high heat. Add 1 tablespoon of canola oil to the pan, then gently place prepared fish in pan. Sear on both sides for 4-5 minutes. Remove from pan and let rest.
  5. To a food processor add red onion, garlic clove, fresh cilantro, 1/4 cup of canola oil, lime juice, red wine vinegar, honey, dijon mustard, 1/4 teaspoon salt, and cumin. Blend until smooth. Set aside.
  6. In a small bowl, add mashed avocado and 2 tablespoons of lime juice. Season with salt to taste. Stir everything together.
  7. Assemble the bowls: add 1/2 cup of rice, one filet of fish, a generous scoop of avocado mash, 1/2 cup purple cabbage, 1/4 cup of sliced jicama, 1/4 cup of diced tomato. Drizzle with dressing mixture and serve!

  1. My oldest turns 15 tomorrow (!!!) and we have quite the number of Legos in our home, too. And we still keep buying new sets because I love the imaginative play the 12 yo and 6 yo do. (Although, my husband wants to keep every box – but I have a binder for each boy with page protectors, and put the instructions booklets in there and have been slowly recycling empty boxes). Big, big clear buckets to dump all those pieces help a ton, as do “house shoes” – I finally learned my lesson.

    This bowl looks so delicious, and I cannot believe it’s done in 30 minutes – that is amazing and I cannot wait to make it this week!

    1. haha.. i refuse to keep the boxes!!! But of course I do keep the instructions and believe me we have a lot of instructions! ๐Ÿ™‚ I need to get the big buckets though, that’s genius! Yeah for legos and creativity!

  2. This bowl food is soul food right here! I love fish tacos, but I could definitely do without the shell! I’d much rather have the fish over these glorious concoction! Also, is the joy of the Lord amazing! Even in times of sorrow, he pours his heart out to us!

    Just wanted to let you know that I made this last night and it was soooo good. I loved the combo of all the flavors, and that Cilantro Lime dressing was sooo good. I had to use champagne vinegar, no red wine vinegar and it still turned out amazing. Thanks for the recipe it’ll be in the rotation from now on. Cheers!
