Buffalo Chicken Quinoa Bowls
This past Sunday I sat in my chair looking up at the stage in the elementary school we hold our new church. Jacob, our worship pastor, was up there leading worship like he does every week .. but for some reason this time felt different.
I have been a journey the past seven or so months. A journey of confusion, anger, asking lots of questions, and then feelings of helplessness.
But in those moments when Jacob was up there leading worship, I felt like God was rushing into the room like a tidal wave. I literally felt blown over by His love, so much so that it literally took my breathe away when I was singing. Tears slowly started to stream down my face.
It was like, in that very moment, when I needed to be touched by God he heard me and came flooding in to let me know how much He loves me, how much He treasures me.
For so long I have been wanting to run away from Him in anger and frustration. But no matter how hard I tried to hide, He was not willing to let me go and that morning I felt it more than ever!
The next day I was sitting on the ground playing Legos with Cason. I had music on in the background and this song by Bethel came on …

Through the eyes of love
God is not surprised one bit by all the hard stuff we are having to walk through right now. He knows exactly what I’m struggling with. He listens as I vent to Him, and is there when I’m crying and don’t know what to do. He knows my heart, just like he knows yours. I have listened to that song on repeat the past couple of days … and just let the words wash over me. “I am seen and I am known by the King of Kings and the Lord of Lords. There’s no place I can go you’re love won’t find me. No place I can hid that you don’t see. When I misunderstand, you’re love understands me. You see it all through the eyes of love.”
God love for us is fierce like a roaring Lion and comforting and gentle like a Lamb. I pray that you feel that today … no I pray that you are overwhelmed by that love today! Just like I was on Sunday morning!

Ok, onto the recipe. Cuz … believe me. It is a good one!
Since football season is in full force so is football food! One of my husbands favorite things is Buffalo Chicken … basically anything! (did you know they even make Buffalo Chicken Chips? Yeah … he’s obsessed) But Buffalo Chicken Dip is a favorite of his, however it’s not the healthiest.
Until now!
I took the dip recipe, healthified it (yeah I made that word up) and transformed it into a delicious nutritious meal you’re gonna love! At first, I will admit, Mike wasn’t so excited about adding QUINOA to his sacred dip. But after taking the first bite the rest of his bowl was devoured in minutes!!
The Buffalo Chicken mixture itself is easy, it’s just a little bit of cream cheese, your favorite buffalo sauce, and chicken! That’s it! Then you can add whatever you want to the bowl! It’ll will be a new staple in our house for game day Sunday! 🙂 That’s for sure!

Description
These Buffalo Chicken Quinoa Bowls are topped with avocado, tomato, shredded buffalo chicken and ranch! Served on a bed of quinoa, football food just got a healthy facelift!
Ingredients
- 3 boneless skinless chicken breasts, cooked & shredded
- 3/4 cup franks red hot sauce (origninal)
- 2 oz. cream cheese, softened
- 1 cup uncooked quinoa
- 2 cups of water
- 4 cups of chopped green leaf lettuce
- 1 cup cherry tomatoes, halved
- 2 avocados, sliced
- 1/3 cup sliced red onion
- 1/4 cup diced fresh cilantro
- optional: drizzle ranch dressing
Instructions
- To a medium sauce pan, add quinoa and water. Bring to a boil. Cover, reduce to simmer and cook for 15 minutes. Turn the heat off and let the quinoa sit there for 5 minutes. Then fluff the quinoa with a fork.
- In the meantime, add shredded chicken, franks red hot sauce, and cream cheese to a medium bowl. Mix everything together and make sure all the chicken is coated with the sauce.
- Assemble the bowls. Add 3/4 cup of quinoa, 3/4 cup of lettuce, 1/2 cup of the buffalo chicken mixture, cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro. (optional: drizzle ranch dressing on top)
- Serve and devour!

I needed to find a simple chicken recipe and found this one. It was quick and easy. My husband loved it. I used another blog tip to shred the chicken with my hand mixer, which then. Loved this so much I am making it again tonight, one week later! I swapped the cream cheese with Greek yogurt to make it a little lighter and it was the perfect substitute.
