Ok, so growing up I hated to eat breakfast. Not because I hated the food, more so because it meant having to get up earlier before getting ready to go to school. In order to get me to eat in the morning, my mom would do the ever dreaded pop tart. {brown sugar pop tarts to be exact} Now that I am older I have come to appreciate a good hearty breakfast. In fact, while I was pregnant it was my favorite meal of the day and therefore would spill over into lunch or dinner. 🙂
Since becoming an at home mom I now have the time to make a gourmet breakfast, if I’d like. But most mornings I wake up and wonder what to eat for breakfast? I’m not the most pleasant morning person and definitely need a cup of coffee to get started. So making a decision first thing well, lets just say it doesn’t happen quickly. If you have ever woken up feeling that way. Never fear, I have solved your problems. This Veggie Eggs Benedict is the perfect pick me up breakfast in the morning. Most Eggs Benedict dishes are topped off with a creamy Hollandaise sauce. Why is this one not? Well, one because I don’t like Hollandaise sauce. Two, because the creaminess from the avocado, goat cheese, and egg yolk is perfect so you don’t need the extra sauce.

To get started, toast 2 english muffins {4 halves} to your desired liking.
Spread 1 oz. of goat cheese across each english muffin half.
Slice 1 roma tomato into 8 pieces, and place 2 slices on each english muffin half.
Slice 1 avocado into long strips and distribute evenly on each english muffin half.
Poach 4 eggs. {for directions on how to poach an egg check out my last post}.
Top each english muffin with 1 poached egg. Enjoy the deliciousness!

I used to eat pop tarts, too. Ugh! I’m with you — eggs benedict don’t need all that hollandaise sauce with the yolk and avocado. I’m not a big fan of hollandaise, so this dish is for me!
