Simple Roasted Asparagus Recipe
So apparently my son is growing up faster than I expected. This morning I set my alarm to wake up at 6:30am. I wanted to get up, read my Bible and have some alone time before the day starts. Well, around 6:37am I heard my son start to cry. This is his normal “MOM I’m up, come get me” routine, he is still trapped in his crib so I have to pick him up each morning. I gave it a minute or two to see if he would fall back asleep, it wasn’t happening. So I surrendered my alone time and started to walk into Cason’s room and there he was….ON THE FLOOR getting ready to open his door.
WHAT!?!? My first question was, “how did you get out of your crib?” Second was, “are you hurt?”. Third was, “how do I lower the crib?”
All that to say… my son is growing up to fast.
Ok, so back to the food. 🙂 At our house we are always looking for easy side dishes with a twist. Last week you got the side dish with a twist, my Grilled Sweet Potatoes with Chipotle Honey Lime Butter. Today your getting the easy dish. We love us some Asparagus, and Roasted Asparagus is one of our favorite ways to prepare it. Cason loves it, for the longest time it was the only vegetable I could get him to eat besides sweet potatoes. The best part about this dish is it only requires 4 ingredients. It’s perfect for those quick meal school nights.
The Best Way to Roast Asparagus
To get started, preheat oven to 400º. Wash 2 bushels of asparagus and trim off the bottom 2 inches of each stalk.
Place asparagus on a baking sheet, drizzle with 3 Tablespoons of olive oil, and with salt & pepper.
Place in the oven and roast for 20 minutes.
Remove and let cool for 5 minutes.
Serve. These Roasted Asparagus would go great with my Paleo Mustard Glazed Chicken.

Oh dear…I’ll never forget the look of pride on my baby girl’s face the first time she tumbled herself out of the crib. After 2 bumps on the head, we placed a twin size mattress on the floor so that the fall was a LITTLE bit safer
hahaha, that is actually a great idea! I might try that if he does it again. Cason was just in sheer shock and crying with his blanket in his mouth, poor guy! 🙂 Plus, he’s teething so that makes everything worse.
My in-laws have an organic asparagus farm, so I’m fortunate enough to get unlimited supplies of asparagus! I never get tired of it! Your roasted asparagus looks like the perfect side dish!

Me too, definitely one of my favorite veggies. I am definitely savoring the moments as Cason grows up, makes me sad. I just want him to stay at the size he’s at. I don’t want to think about him going to school or driving! Yikes.
