Grilled Sweet Potatoes with Chipotle Honey Lime Butter
Ok, so after my sweet potato post last week I have been wanting to make Sweet Potatoes. I mean did you see those recipes? They all looked awesome, right? {if you missed it, here is the Sweet Potato Recipe Roundup}
I am always looking to create another grill recipe, I pretty much have a love affair with my grill! So with my desire for sweet potatoes and love for grilling why not throw those sweet potatoes on the grill, seems logical to me. The only thing I was nervous about when making this side dish was making sure that I didn’t end up with a mess on the grill because the sweet potatoes stuck or that they ended up crunchy because I didn’t cook them long enough. Let’s face it, no body likes a mess or a crunchy potato. So in order to ensure optimal sweet potato success, I loaded those potatoes with olive oil and coated the grill as well. So, mess was avoided. Unfortunately, my sweet potatoes did come out a little crunchy. I think I had the grill up to high so I had to turn them earlier than needed. Be sure your grill is at medium to medium high heat so that you can grill each side for 4-8 minutes. The Grilled Sweet Potatoes were still delicious despite their crunchiness. {I actually just threw them in the microwave to cook them a little more and they were perfect.} Top it off with the sweet and spicy Chipotle Honey Lime Butter, and you will be one happy camper with a healthy side dish!
Grilled Sweet Potato Recipe
To get started, peel 3 large Sweet Potatoes.
Next, cut them into 1/4″ slices.
Preheat the grill to medium high heat. Generously season sweet potatoes with 3 Tablespoons of olive oil and salt.
In the meantime, make your Chipotle Honey Lime Butter. Set aside.
Place Sweet Potatoes on oiled grill. {I used olive oil cooking spray, but your could brush the grates with olive oil}
Grill each side for 4-8 minutes {depending on thickness}.
Generously brush the top of the sweet potatoes with the Chipotle Honey Lime Butter while still on grill.
Remove from grill and finish off with 2 Tablespoons of freshly chopped Cilantro.

Ingredients
- 3 large sweet potatoes, peeled & slice into 1/4 inch slices
- 3 Tablespoons of olive oil
- Salt
- Chipotle Honey Lime Butter
- 2 Tablespoons of fresh cilantro, chopped
Instructions
- Peel Sweet Potatoes and cut them into 1/4″ slices.
- Preheat the grill to medium high heat.
- Generously season sweet potatoes with olive oil and salt.
- In the meantime, make your Chipotle Honey Lime Butter. Set aside.
- Place Sweet Potatoes on oiled grill. {I used olive oil cooking spray, but your could brush the grates with olive oil}
- Grilled each side for 4-8 minutes {depending on thickness}.

I will have to try these. We are trying not to eat so many white potatoes, and eat more sweet potatoes. I am not a cilantro lover, but I love, love chipotle.

What a great looking recipe. With Labor Day this weekend I’m fully going to whip this up. I like the shorter amount of time you’re cooking them. A lot of people pretty much kill their potatoes by over cooking them. 10-16 minutes total is perfect.
Also, everyone is right, great pictures. You’re making me realize I really need to up the ante with my pictures.
