These Grilled Sweet Potatoes with Chipotle Honey Lime Butter are the perfect healthy side dish and so easy to make its ridiculous! A grilled twist on the typical sweet potato.

Ok, so after my sweet potato post last week I have been wanting to make Sweet Potatoes.  I mean did you see those recipes?  They all looked awesome, right? {if you missed it, here is the Sweet Potato Recipe Roundup}

I am always looking to create another grill recipe, I pretty much have a love affair with my grill!  So with my desire for sweet potatoes and love for grilling why not throw those sweet potatoes on the grill, seems logical to me.  The only thing I was nervous about when making this side dish was making sure that I didn’t end up with a mess on the grill because the sweet potatoes stuck or that they ended up crunchy because I didn’t cook them long enough.  Let’s face it, no body likes a mess or a crunchy potato.  So in order to ensure optimal sweet potato success, I loaded those potatoes with olive oil and coated the grill as well.  So, mess was avoided.  Unfortunately, my sweet potatoes did come out a little crunchy.  I think I had the grill up to high so I had to turn them earlier than needed.  Be sure your grill is at medium to medium high heat so that you can grill each side for 4-8 minutes.  The Grilled Sweet Potatoes were still delicious despite their crunchiness.  {I actually just threw them in the microwave to cook them a little more and they were perfect.}  Top it off with the sweet and spicy Chipotle Honey Lime Butter, and you will be one happy camper with a healthy side dish!

To get started, peel 3 large Sweet Potatoes.

Place Sweet Potatoes on oiled grill.  {I used olive oil cooking spray, but your could brush the grates with olive oil}

Grilled Sweet Potatoes 5

Grill each side for 4-8 minutes {depending on thickness}.

Generously brush the top of the sweet potatoes with the Chipotle Honey Lime Butter while still on grill.

  1. Love how easy and simple…but very classy this dish is! I love my grill, too! I’m a charcoal girl…low and slow. So, if I’m putting anything on (meat), I have to start the whole process by 10 am. But, with your creation here– it’s perfect to throw on right before it’s time to eat! Pinning! (Love the long pics– especially for pinning!)

    1. I use to be a charcoal girl too, thats how I was raised. But I’m also impatience and love the convenience of turning the grill on and throwing the meat/vegetables/what not on the grill 3 minutes later. But, nothing can beat that charcoal taste. 🙂 You and your boys will love this dish! Thanks for the sweet comments!

  2. Yummy!!! I am so boring, I usually just cook my sweet potato in the microwave. I will definitely give this a try the next time we barbecue 🙂 Thank you so much for joining us and sharing at Best of the Weekend! Pinning to our party board. Enjoy a happy weekend and please join us next Friday.

  3. Oh my gosh, Krista… This awesome recipe couldn’t be any easier! It looks absolutely delicious too! I can’t wait to put these on my dinner table! Actually, they probably won’t last long on the table… they’ll be devoured in nano seconds! 🙂

  4. What a great looking recipe. With Labor Day this weekend I’m fully going to whip this up. I like the shorter amount of time you’re cooking them. A lot of people pretty much kill their potatoes by over cooking them. 10-16 minutes total is perfect.
    Also, everyone is right, great pictures. You’re making me realize I really need to up the ante with my pictures.

    1. Thanks Mike, you will love it for this weekend! Even my little guy liked it, which I wasn’t sure about at first because of the chipotles but he scoured it down. 🙂 I appreciate the encouragement with the photos. Just know it is a process, you should see the first pictures I took for the blog… yikes. Makes me laugh now, you will get there. Your site looks great and can’t wait to get updates. I graduated with a degree in sports wellness & management myself. 🙂
