Well, we are finally here. The weekend I’ve been waiting for since February.

It’s almost football season. But before it’s football season.

It’s fantasy draft time. Which at our house is a big deal.

This year we are hosting two drafts at our house, one is tomorrow and the other one is next Tuesday. Tomorrow is for my all ladies league. We are meeting in the morning and doing a brunch draft, which will include these Prosciutto Egg Cups, an Apple Cinnamon Coffee Cake (recipe coming soon) and of course Mimosas. Because well, you can’t have a girls brunch without Mimosas. 🙂

But on Tuesday we are hosting a draft for one of my husbands leagues… ps this year he’s in four leagues. He’s crazy! Honestly I don’t know how he’s going to keep up. But that’s beside the point.

Men don’t want Mimosas at their draf. They want Wings and Beer.

Last year for their draft I made Cheesy Buffalo Chicken Sliders, Honey BBQ Chicken Wings and Loaded Sweet Potato Fries. (all of the links are at the end of this post) Every single bite was devoured. This year I needed to up my game. After all, now they know “food is kinda my thang” so they expect big things.

I’m planning on blowing their socks off, both figuratively and literally with these Honey Sriracha Baked Chicken Wings. Everything about these wings is finger licking good.

No need to fry your wings to get that “crispy” exterior. No need to coat it in breading to get that crunch. Nope.

All you need to do is bake them in the oven until they are cooked through, then put them under the broiler. That is the key to the ultimate crispy chicken wings.

The chicken wings themselves are incredible! I use this base cooking technique for all of my wings and then change up the sauce for the mood I’m in. But this Honey Sriracha Sauce is by far my favorite.

It’s sweet, sticky, spicy and then has a slight smokiness to it from the smoked paprika. I guarantee these will be devoured.

Description

Low Carb Honey Sriracha Baked Chicken Wings, crispy delicious wings baked in the oven then covered with a sweet ‘n spicy honey sriracha sauce. These Chicken Wings make the perfect game day appetizer!


Ingredients

  • 2 lbs. of chicken (mixture of wings and drumettes)
  • 2 tablespoons canola oil
  • salt & pepper to season

Honey Sriracha Sauce:

  • 2 Tablespoons unsalted butter
  • 1 Tablespoon minced fresh ginger
  • 2 garlic cloves, minced
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cloves
  • 4 Tablespoons honey
  • 6 Tablespoons Sriracha
  • 1 Tablespoon lime juice

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add chicken to a large bowl. Pat chicken dry.
  3. Drizzle with 2 tablespoons of canola oil. Season with sea salt and black pepper. Gently toss to coat all the chicken.
  4. Place chicken on a wire rack lined baking sheet. (if you don’t have a wire rack, use parchment paper)
  5. Bake for 40 minutes, flipping the chicken after 20 minutes.
  6. Turn the Broiler on to HIGH.
  7. Place chicken under broiler for 8-10 minutes, until browned.
  8. In the meantime, to a small saucepan, add butter. Once melted add in fresh ginger and garlic. Stir until fragrant, about 1 minute.
  9. Next add in smoked paprika, ground cloves, honey, Sriracha and lime juice. Stir to combine and let simmer for 4-5 minutes.
  10. Once chicken is done add to a large bowl. Pour honey sriracha sauce over the top and toss to coat all the wings with the sauce.
  11. Garnish with chopped chives.
