Garlic Herb Roasted Potatoes

Is it just me, or is everything better with garlic! Seriously, think about it. Almost every recipe has at least one clove of garlic in it because just that one clove can change the taste of the entire dish. It’s been said to boost immunity, help with the heart, aid in digestion, and cleanse the body of toxins. Plus it makes you gas, and gas is good, right? (Well, not the smelly kind.) A friend of mine always says “A clean colon is a happy colon!”

Okay, so to be honest. It’s kinda hard to make a good transition into the recipe from “smelly gas”. So, here’s this weeks “Helping Hubbie” post.

It’s not a main dish, but every hubbie needs a little something to add to his repertoire of delicious recipes. Plus, what guy doesn’t love potatoes!

These Garlic Herb Roasted Potatoes have some amazing flavors, from the fresh herbs to the roasted garlic. The outside is crisp while the inside is nice and soft. You and your family will love them and I hope it makes it into your go to side dish list.

How to Make The Best Roasted Potatoes

Preheat the oven to 400º. Wash 1.5 pounds of mini potatoes very well.

Chop up 3 cloves of garlic, 2 T. of fresh thyme, and 2 T. of fresh rosemary.

Put potatoes in a bowl and add rosemary, thyme, garlic, 3 T. of olive oil, pepper and salt (generously season with salt here because the potatoes will soak it all up, you don’t want them tasting bland.)

Toss to coat. Spread seasoned potatoes out in single layer on a baking sheet.

Roast for 30 minutes, turning potatoes over half way through to ensure equal roasting.

  • 1.5 lb. mini yellow potatoes (1″ in diameter)
  • 3 garlic cloves, minced
  • 2 T. fresh thyme, finely chopped
  • 2 T. fresh rosemary, finely chopped
  • 3 T. olive oil
  • salt & pepper

Instructions

  1. Preheat oven to 400º.
  2. Wash mini potatoes very well.
