Real Men Cook: Baked Caprese Tomatoes

Its funny how when you become a parent “date night” turns into “errand night”. Last night, since my parents were in town, Mike and I took advantage and had ourselves a little date night. However, this is not your “run of the mill” dinner and a movie date night. Tomorrow is my son’s 1st birthday and his 1st birthday PARTY, so guess who has ALOT of work, cooking, and cleaning to do … this girl right here (raising my hand.) We also still had not purchased his birthday present yet, so Mike thought we could go to Toys’R’Us and look around. (very romantic I know) Then I threw in sheepishly. “Well… If we could stop at Walmart too I could get all my food shopping done as well”

So for date night, Mike and I had a romantic evening looking at mini playground sets and Leap Frog Alphabet games at Toys’R’Us and then moved onto a stroll through Walmart. (FYI- there really are “interesting” people at Walmart around 9pm or as my dad likes to call them “Walmartians”)

While we are on the “party” topic, I know when you throw a party you want all the help you can get. (or at least I do) And who better to help than your husband, right?! So, today’s helping hubbie post is an Appetizer that your hubbie can make the day of your party. It is Baked Caprese Tomatoes! They are super easy, only have 5 ingredients, and are delicious! What’s not to love?

To get started, preheat oven to 450Slice 5 tomatoes in 1/4″ slices and place on baking sheet.

Place 1 slice of fresh mozzarella on each slice of tomato.

Season with olive oil, salt, and pepper.

Place 1 basil leaf on each tomato mozzarella slice.

Place in oven and bake for 8-10 minutes. (or until cheese is melted and slightly browned)

Helping Hubbie: Baked Caprese Tomatoes

Ingredients

  • 5 tomatoes, 1/4″ slices (on-the-vine kind or beef steak)
  • 20-25 fresh basil leaves
  • 8 oz. fresh mozzarella, sliced
  • olive oil
  • salt & pepper

Instructions

  1. Preheat oven to 450.
  2. Slice your tomatoes in 1/4″ slices and place on baking sheet.
  3. Place 1 slice of fresh mozzarella on each slice of tomato.
  4. Season with olive oil, salt, and pepper.
  5. Place 1 fresh basil leaf on each tomato mozzarella slice.
  6. Put in oven and bake for 8-10 minutes. (or until cheese is melted and slightly browned)
  7. Serve them up and scarf down! 🙂

  1. Krista, I WISH I could get my husband to help out in the kitchen. I know this recipe is super easy and fool proof, but my hubby would ask me 100 questions, so it’s just easier to have him no where close to the kitchen. LOL! These look super good! Pinning!

  2. Happy bday to your cute lil one! It goes by so fast…my (big) baby is turning 22! Love how your date night went! Hey, as long as you can go somewhere and visit without being interrupted by the lil ones– is the way to go! We just went out last night by the river and went fishing for our date. It’s 3 minutes away…I told the kids I was going far, far away! You just need that alone time together with your hubs! Have fun with the bday party!

      Love that you told the kids you were going “far away” for your date night and just went right down the road, thats hilarious! But its so true.. sometimes you just need that alone time to decompress and just be with each other. I think if more people did that these days marriages would be alot better off!

I have my basil going this year but no tomatoes (I had too many bug problems last year unfortunately 🙁 ) Thanks for featuring me… I went over and checked it out.
