Mexican Food Is One Of My Favorite Things To Eat

Um… just so you’re prepared, the next couple weeks are going to be filled with lots of Mexican food love! Would you expect anything less? Cinco de Mayo is in less than a month people!

Things that make me happy and make Fridays even better than what they already are …. Margaritas, Guacamole, and Fajitas. I am down right obsessed and could literally have Mexican food every day of my life!

I’m pretty sure that my full time job should be preparing for Cinco de Mayo year round!

Or maybe I missed my calling to own a Tex Mex food truck and ride around the country! I’m not sure. Either way I have an insane love for all things Southwestern and for grilling. Sometimes I think I’m Bobby Flay’s daughter and he just doesn’t know I exist yet! Maybe some day we’ll meet and then… I would cry, stare, and pass out.

Do you have any celebrities you would do that with? People that you really look up to that you would just pass out or start crying if you saw them in person?

These Steak Street Tacos Are Perfect For Cinco de Mayo

Ok, while we’re on the Bobby Flay talk, I truly think this is something he would make at home. It’s simple, has steak as the star, is southwestern inspired and grilled!

These Grilled Steak Street Tacos definitely fit the bill and then some, perfect for fiesta food.

WARNING! Proceed with caution. Eating this taco may cause loss of body movement. People have been known to break out in the Salsa dance after the first bite!!

So why are these Street Tacos so freakin awesome? Well, they are filled with tender Filet Mignon Steak that is thinly sliced for the perfect texture, ya’ll my mouth is literally salivating thinking of these babies!

How To Season Steak For Steak Tacos

All I did to the steak was season it with salt and pepper, with Filet Mignon you don’t need to do much. Just don’t overcook it! Please!!!! Nobody likes a piece of incredibly dry steak and once you overcook it, you can’t recover!

This recipe takes grilling to the next level and the combination of Filet Mignon with sweet mango, charred red onion, and fresh avocado is absolutely mind blowing! Finish them off with a squeeze of lime juice or top them with fresh jalapenos if you like a little heat.

Grilled Filet Mignon Street Tacos

These easy Grilled Steak Street Tacos are filled with tender Filet Mignon, fresh mango, creamy avocado, and charred onions. It’s the perfect 20 minute steak dinner that tastes like a flavor bomb went off in your mouth!



Grilled Filet Mignon Tacos:

  • 3 (6oz) Omaha Filet Mignons
  • salt & pepper to season
  • 1 mango, diced
  • 2 avocados, sliced
  • 1 red onion, 1/2″ thick slices
  • 4 limes, halved
  • 1/2 cup of queso fresco
  • 12 corn tortillas
  • {optional} fresh cilantro & fresh jalapeno slices


Grilled Filet Mignon Tacos:

  1. Heat grill to medium high heat.
  2. Remove filet mignon from refrigerator ten minutes prior to grilling. Generously season with salt and pepper on both sides.
  3. Place red onions slices and limes on grill. Grill limes for about 4-5 minutes, flesh side down. Grill onions for 4-5 minutes per side. Remove from grill and let sit.
  4. Place filet mignon on grill. Grill each side for 3-4 minutes for medium rare or 4-6 minutes for medium/medium well.
  5. Remove from grill and let sit.
  6. Place corn tortillas on grill and grill for 1 minute per side. Remove from grill.
  7. Thinly slice filet mignon.
  8. Assemble tacos: corn tortilla, steak, diced mango, a couple slices of red onion, 1 teaspoon of queso fresco, 1-2 slices of avocado. Squeeze grilled lime over tacos and serve!
