Greek Chicken Salad

Let’s be real… we are about to enter the ever so dreaded swim suit season. I’m not sure what that means to you, but to me it means more salads and less chocolate chips.

When you eat as many salads as I do this time of year you have to be creative with the ingredients or at least pick a category {italian, caprese, steak, greek, etc.} and go with it. 🙂 I have been in a Greek mood lately thanks to my friend Meg over at Big Red Clifford! She has been posting any and everything Greek!  Which has inspired me to make this Greek Chicken Salad with Paleo Avocado Tzatziki Sauce. If you haven’t tried this sauce yet you gotta make it, it totally makes the salad! {or you could be boring and just go out and buy a bottle of Greek Dressing… boo}


To get started…. you will need to have 1 pint of cherry tomatoes {halved}, 1 whole cucumber {cut into 1/4″ slices}, and 3 pre-cooked chicken breasts {cubed}.


Now, just assemble. Throw 8 oz. of spring mix salad into a bowl, top with cherry tomatoes, cucumbers, 1/2 cup of pitted kalamata olives, 4 oz. of crumbled feta cheese, and cubed chicken breast.


Serve with the Paleo Avocado Tzatziki Sauce

  • 8 oz. spring mix salad
  • 1 cucumber, sliced
  • 1 pint of cherry tomatoes, halved
  • 1/2 cup of pitted kalamata olives
  • 4 oz. of feta cheese, crumbled
  • 3 grilled or baked chicken breasts, sliced
  • 1 cup of Paleo Avocado Tzatziki Sauce


  1. Now, just assemble. Throw spring mix salad into a bowl, top with cherry tomatoes, cucumbers, kalamata olives, crumbled feta cheese, and cubed chicken breast.
  2. Serve with the Paleo Avocado Tzatziki Sauce.
