This isn’t your ordinary crockpot buffalo chicken dip! It’s creamy, spicy, and cheesy, but it also has a high protein bonus because it’s made with cottage cheese. A crowd-pleasing appetizer and lunch that’s so easy, it practically makes itself!

And this crockpot buffalo chicken dip is my latest creation! It’s got that spicy, tangy buffalo flavor, it’s ultra creamy, loaded with chicken, but it’s WAY healthier than the classic version. Grab a bag of chips and let’s dig in!

What You’ll Need

  • Shredded chicken breast – Rotisserie chicken works great, but you can also use leftovers or just cook and shred chicken before starting the recipe.
  • Cottage cheese – Blended smooth, it creates a creamy base without heavy cream or cream cheese. You can use full-fat or reduced-fat, but I don’t recommend fat-free.
  • Buffalo sauce – I use the Primal Kitchen brand.
  • Shredded Mexican cheese – Cheddar, Monterey jack, or pepper jack are also options.
  • Seasonings – Garlic powder, smoked paprika, and dry dill.
  • Green onions – Optional, for garnish.

How to Make Crockpot Buffalo Chicken Dip

Let’s get started! Here’s what you’ll need to do:

  • Blend. Add the cottage cheese to a blender and blend until smooth.
  • Combine everything. Add all of the ingredients to the crockpot and stir well.
  • Slow cook. Cover and cook on LOW for 2 hours.
  • Garnish and serve. Top with green onions, if desired.

Tips and Variations

  • Make it extra spicy. For more heat, you can add more buffalo sauce or some cayenne. 
  • Add blue cheese. Love your buffalo wings with blue cheese? Sprinkle blue cheese crumbles over the dip before serving. 
  • Keep it warm. After 2 hours of cooking, turn the crockpot to the keep warm setting so it stays at a safe temperature while you’re serving it.

  • Crackers
  • Toasted baguette slices

It’s also delicious spooned over baked potatoes and for nachos! Or use it as an epic grilled cheese sandwich filling.

Storage and Reheating

  • Refrigerator: Store leftover crockpot buffalo chicken dip in an airtight container in the refrigerator for up to 4 days. 
  • Freezer: Freeze the dip in an airtight container or freezer bag for up to 3 months. Thaw in the refrigerator before reheating.
  • To reheat: Reheat gently in the microwave, stirring until warmed through. You can also return it to the crockpot if you have a lot to reheat; warm it on LOW for 2 hours.

Ingredients

  • 5 cups shredded chicken breast (or rotisserie chicken)
  • 1 1/2 cups cottage cheese
  • 1/2 cup primal kitchen buffalo sauce
  • 1/2 cup shredded mexican cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dry dill
  • optional: garnish with sliced green onions

Instructions

  1. Add cottage cheese to a blender. Blend until smooth.
