Do you ever feel like your goals or dreams are bigger than you have time for?
Sometimes I wish I would have started this blog when I didn’t have kids. To really pour my time into building a brand with strong marketing so that when I had kids I wouldn’t still be striving.
I started my blog when Cason was 9 months and I was at home with him. I feel like everything has started slow and I barely have enough time in the day to make a recipe, photograph it and then write about it. More less taking time to do market research and then do analytics on marketing strategies and such. I have so many things I’d love to change or start doing but I don’t have the time.
I definitely don’t want to be “working” when my kids are awake or at home with me. That kinda contradicts the whole, being at home to be with my kids idea. I want to be present with them and not on my computer or phone the whole time. Striving.
The biggest challenge or battle in my mind as of late is social media.
I know I need to do it. I want to do it. I love watching other peoples instagram stories or reading facebook posts. I just have to find a balance with it. Lately for me it’s all or nothing. I post a ton on one day and then nothing for like 3 days. I need to find what works for me, that fits seamlessly into my daily life and doesn’t consume my thoughts or day because I’m editing a photo for instagram.
Can any one else relate? Or is it just me?

How To Make Winter Fruit Salad
Alright, todays recipe is all about fresh seasonal produce … more specifically winter citrus. Fresh sweet navel oranges, tart grapefruits and sweet blood oranges. You are absolutely going to love this salad. It’s filled with three different kinds of citrus, creamy avocado, raw almonds, tangy goat cheese and red onion. Then topped with a sweet tangy Honey Mustard Dressing.
Serve this salad plain or add some grilled shrimp or seared chicken and you have yourself one tasty meal.

Description
An easy Winter Fruit Avocado Salad made with fresh citrus, avocado, spinach and goat cheese. This healthy citrus avocado salad recipe is done in 15 minutes!
Ingredients
- 4 cups baby spinach
- 1 grapefruit
- 1 navel orange
- 1 blood orange
- 1 avocado, sliced
- 1/4 cup sliced red onion
- 1 oz crumbled goat cheese
- 2 tablespoons sliced almonds
Honey Mustard Dressing:
- 2 tablespoons honey
- 2 tablespoons dijon mustard
- 1 tablespoon apple cider vinegar
Instructions
- To a large platter add spinach.
- Slice the skin off the citrus fruit and thinly slice, arrange citrus slices on top of bed of spinach. Next add avocado slices, red onion, crumbled goat cheese and sliced almonds. Set aside.
- To a small bowl add honey, dijon mustard and apple cider vinegar. Whisk until the smooth and looks like a dressing.
- Serve with dressing on the side.
