Easy Strawberry Avocado Pasta Salad tossed with fresh arugula, bacon, and a balsamic vinaigrette. The perfect pasta salad for those summer nights!
Guys. It’s almost time. Can you feel it?
The summer sun beating on your back. The stores filling with water guns, sidewalk chalk, beach towels, citronella candles, and everything red, white, and blue. Do you know what I’m talking about? It’s the summer. I think there are officially less than 20 days left of school and then the summer will begin.
Which means late night water gun fights, sitting on the driveway with popsicles melting down your arm, living in swimsuits, and loads of summer grilling parties. Backyard parties were always my favorite growing up.
For one, because that just meant we got to stay up later than normal and play but we also had TONS of food to graze on all day! It was the best. If we hosted, my mom would always make the “main dish” and then everyone else would bring the sides; instead of her having to make all the food! I now understand her genius behind that!
Ok, let’s be honest. What is one of the easiest things to make and something you see the most of on that food table? Any guesses? Answer –> pasta salad But with all the gluten allergies or GF diets out there now, it makes it kinda hard to enjoy our favorite easy summer side dish. What is a girl to do?
Gluten Free Pasta is the answer ya’ll.
It allows you to bring your salad and eat it too! Honestly though, most brands taste like cardboard. Or after you’re done with the cooking process the noodles are super starchy and down right disgusting! Well, another problem solved –> truRoots Ancient Grain Pasta does none of those things. It has a nice “bite” to it, is easy to cook (as in it takes 2-3 minutes and it’s done), and doesn’t leave the starchy taste in your mouth!
TruRoots is committed to making ancient grains accessible to everyone with a large selection of sprouted grains, pastas and pilafs inspired by ancient cultures and time-honored harvesting practices. All of their products are sustainably grown using certified organic standards. TruRoots Ancient Grain Pastas are Certified USDA Organic and gluten-free, made with a blend of unique, quality ingredients. The combos that they use keep their pastas a firm al dente texture after cooking. Woohoo!!!! No more mushy pasta! I guarantee you won’t even tell a difference!
On a side note, man I’m on a roll today with problem solving. (patting myself on the back)
This Strawberry Avocado Pasta Salad will be the thing your summer dreams are made of! I mean what’s not to like… Strawberries √ Avocado √ BACON √ Balsamic Vinegar √ Noodles √ A few greens for good measure.
Basically it’s all my favorite heavy hitters in one dish. Plus when you bring it to the par-tay you can be like. Um.. yeah it’s gluten free. And then you’re going to be the most popular person there because you brought this killer pasta salad. Just sayin. If you want to popular, make this salad and be sure to use THIS pasta otherwise you’ll end up with a mushy mess and nobody likes that!
Bon Appetit ya’ll and happy weekend-ing!
