Summer Citrus Avocado Salad
Whew! We made it!
Blood, Sweat, and lots of tears. But we made it. We officially closed on our house. Who knew you could have so many emotions all at once with one simple (or not so simple) step.
I can remember the day we closed on this house. We weren’t married yet, we were engaged and at the time I was living in Wisconsin and Mike was in Texas. I flew to Texas to go “house hunting,” we looked through a couple of homes and loved this particular floor plan. I remember going back to the show room and picking out all our selections.
It was the first “adult” decision I felt like I had done. After all I hadn’t even graduated college yet and I was getting ready to buy a house with my soon to be husband!!
Moving into the house felt surreal. It was brand new and WE were brand new in our marriage.
It was the first and ONLY house we’ve lived in since we’ve been married. We’ve made a lot of good memories in that house, cried a lot of tears, and brought our first son home to that house.
I know each and every nook and cranny of that house. There are marks on Cason’s bedroom door of how tall he has gotten over the years … things that are so near and dear to my heart.
Saying goodbye was definitely hard. Even as I write this I’m tearing up.
God molded us in that house. He set the foundation of our marriage in that house and I will forever be grateful, but I’m definitely looking forward to what he has for our future!
Now on to the fun part. Designing our dream house!! So many thoughts and ideas go through my head, to say that I have a few Pinterest boards on the subject is an understatement! (don’t worry they are all secret boards so you won’t be bombarded by my “new house stuff” pins)

Ok, now onto this refreshingly light salad that I KNOW you are going to adore! This salad may have just become my new favorite! It is filled with citrus flavor! From fresh navel oranges to juice sweet blood oranges, and then a citrus olive oil to push it over the top … you’ll fall in love! Then to compliment all the citrus flavor I added crunchy jicama, creamy avocado, and tart blackberries for the best bite this spring and summer!
What to Make with this Citrus Salad
This salad would pair perfectly with a light fish dish, like my Honey Mustard Pecan Crusted Salmon, or a juicy Grilled Chicken, like my Balsamic Glazed Grilled Chicken. Which ever path you choose this salad is a must … starting now! It takes 10 minutes to make, incredibly refreshing, filled with flavor and only 181 calories! You’ll love it!

Description
This Summer Citrus Avocado Salad is filled with fresh blackberries, avocado, spicy arugula, and vibrant citrus, then finished with a Citrus Vinaigrette. This salad is light, refreshing, low in calories, and takes minutes to make!
Ingredients
- 4 cups arugula
- 1/2 cup blackberries
- 1/3 cup diced jicama
- 2 navel oranges, segmented
- 1 blood orange, sliced or segmented
- 1 avocado, sliced
Citrus Vinaigrette:
- 2 tablespoons fresh orange juice
- 1 tablespoons fresh lemon juice
- 2 tablespoons Pasolivo citrus olive oil
- 1 teaspoon honey
- 1/2 teaspoon red pepper flakes
- salt & pepper to taste
Instructions
- In a large bowl, add arugula, blackberries, jicama, segmented oranges, blood orange, and avocado.
- In a small bowl, add orange juice, lemon juice, citrus olive oil, honey, red pepper flakes, salt, and pepper to taste. Whisk together until smooth.
