This past weekend we were all in the car on the way to meet friends for lunch. Mike asked Cason, “hey buddy, what should we do for mommy on mother’s day?” To which Cason replied, “I don’t know, mommy what do you want??”
I said “I would love for daddy and Cason to make me a special dinner all by themselves.”
Of course Cason takes it as a challenge and says, “ok mommy. Daddy we watch Bobby Flay.”
haha.. he is truly my son! Apparently he also goes to Bobby Flay for inspiration. 🙂
I can’t wait to see what they come up with! Whatever it is I know it’s going to be special because my boys made it for me. 🙂
Although secretly I hope they remember to make dessert, because dessert is the way to my heart.

Toasted Coconut Chocolate Chip Cookies

Description
Toasted Coconut Chocolate Chunk Cookies that are soft, chewy, oozing with chocolate goodness all while using less butter and sugar! I guarantee you’ll want to hoard these cookies!
Ingredients
- 9 tablespoons of unsalted butter, softened
- ½ cup white sugar
- ½ cup of light brown sugar
- 1 teaspoon of vanilla extract
- 2 eggs
- 2¼ cup of flour
- 1 teaspoon of salt
- 1 teaspoon of baking soda
- 1/2 cup toasted coconut
- 1 {10-12oz.} bag chocolate chunks
Instructions
- Preheat oven to 375 degrees.
- In a stand mixer, add softened butter, white sugar, light brown sugar, and vanilla extract.
- Mix until creamy.
- Next add 2 eggs, one at a time. Continue to mix until smooth.
- In a medium size bowl, add flour, salt, and baking soda.
- Add the flour mixture to the stand mixer in 2 batches. Make sure all the flour is completely combined.
- Lastly add toasted coconut and chocolate chunks.
- Scoop batter onto baking sheet {I use a baking silicon mat as well, helps to not brown the bottom of the cookie}.
- Bake cookies for 8-10 minutes.
- Makes about 3 dozen cookies.
