Do you ever feel like you’re juggling too many balls you forgot how many you threw up there?

And really won’t know or remember what they are until they all start falling down on you.

That’s exactly how I feel right now.

Right now we are just handling things as they come at us. More reactive than proactive. Which is normally not my thing. I am a planner, I like to know what’s coming at me and how I’m gonna handle it. But right now, we are flying by the seat of pants.

Lately it seems like one “fire” after the other and then to compound things even more. My parents are on the road driving here, found out they can’t close until next week Tuesday at the earliest (when they were suppose to close on Wednesday of this week) so they are going to have to stay at our house. Which is fine. Except when I got home today I found out that our water got shut off because apparently they didn’t transfer the account to our new address and it takes 48 hours for a new account to get through the system and then another day before they turn it on. Which means NO water over the long 3 day weekend … AWESOME!

I mean … just give me a glass of wine … scratch that ..  a bottle of wine I don’t have water to wash the glass! (ughh…crying in the corner)

At least it IS a three day weekend and we get to have extra family time. We’ll just be smelly. hehe

The only saving grace is this recipe .. and balsamic reduction.

Ohh… good old balsamic reduction … how I love thee and want to slather thee of all my body. (ok, clearly I’m not meant for poems)

This recipe embodies everything I love! Crunchy toasted bread, creamy tangy goat cheese (which is the BEST cheese in my humble opinion), roasted tomatoes (the way tomatoes were meant to be eaten), fresh basil and delicious sweet balsamic reduction. It’s basically heavenly!

In fact, I’m pretty sure that heaven will have food like this! Or at least that’s what I’m hoping for.:)

But in the mean time I’m going to eat up all I can here! And you should too, starting with this weekend! It’s the perfect appetizer for a long holiday weekend or makes a fun date night “in” with a glass of wine.

Caprese Bruschetta with Whipped Goat Cheese

Description

A crunchy toasted bread topped with creamy tangy goat cheese, roasted tomatoes, fresh basil, and a drizzle of sweet balsamic reduction.


Ingredients

Scale
  • 16 oz. cherry tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/3 cup balsamic reduction
  • 1 fresh loaf of bread, sliced
  • 1/2 cup fresh basil, chiffoned
  • 4 oz. goat cheese, softened
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 400 degrees.
  2. Add cherry tomatoes to a bowl along with olive oil and salt. Toss to coat. Spread tomatoes out on a baking sheet.
  3. Bake in oven to for 20 minutes. Remove and let set.
  4. Toast the bread. (i used a panini press, but you could toast on the grill or stove)
  5. In a small food processor add goat cheese and garlic powder. Blend until cheese looks whipped and soft.
  6. Spread cheese out on bread, top with roasted tomatoes, fresh basil, and a drizzle of balsamic reduction.
  7. DEVOUR!

    Okay, don’t go slathering that balsamic reduction all over you now. Not when you can’t shower for 3 days, lol. 😉 But all joking aside- YIKES! 3 days is a long time to not having running water! :/

    But at least you have this tasty bruschetta to serve your parents, right? It looks delicious! 🙂

  4. Oh yeah that sucks about no water! Trade your neighbors some of your delicious food for a shower and some buckets of water. That will make life easier! Hang in there. I have 2 questions- I can use Roma tomatoes right? Just slice em up? I’ve got a ton….and what exactly is balsamic reduction? Thanks! Happy 4th!

    1. haha… I know right! I should have done that!

      Yes you can use roma tomatoes I would dice them up and remove the seeds or it will get really juicy.

      Balsamic Reduction is basically Balsamic Vinegar that is cooked down on the stove top and it turns into a delicious balsamic syrup. The recipe/instructions on how to do it are on my blog … cuz I’m obsessed. 🙂

    Oh honey 🙁 Here’s a pitcher of wine! Hang in there – these are things that will be taken care of in days. If I were you, I’d make myself a bunch of these amazing little apps and go at it WITH that pitcher of wine. Buhlieve me, it does a body good. 😉

    Oh girl, I have been there too. I am a planner and when those little balls I threw into my plan decide to go haywire, I need wine too!! And I guess if you have to be smelly, at least it is with family you love and you have amazing food to eat 🙂
