Do you ever just need your “cup filled up?” A revival in your spirit? Words of encouragement spoken to you at the exact time you need them?
I think around the holidays in general our tank usually is running on empty because of the hustle and bustle of the season. But, what if we sat still for just 10 minutes. Eyes closed. Minds silenced. What if we took a breath in and a breath out and did something that would fill our tank. Just for a little bit. So we weren’t running on fumes.
I did this today while I was at a restaurant working. I had my ear plugs in, my head down and eyes closed. As I sat there listening to a song on repeat, letting the words and truths of the song wash over my spirit and heart I felt REST. Just for 10 minutes and it was perfect! It was exactly what I needed to revive my spirit!
There was a part of the song that hit me hard. I think I’ve actually talked about this song before but it’s worth repeating. The song is called “Reckless Love” by Bethel Music.
There’s no shadow you won’t light up. Mountain you won’t climb up. Coming after me. There’s no wall you won’t kick down. Lie you won’t tear down coming after me.
I think this chorus hit me so hard because I started having flashbacks of the times I felt God was pursuing my heart hardcore. The times I felt like I was alone and broken, I was not. The times where my heart hurt the most he was right there. He was like a hurricane ruining havoc on everything in his path trying to get to me. Like a fierce lion devouring everything to protect it’s cub hiding in the corner. He was not going to let anything happen to me, his eye is ever on me and unwavering.
He is a God who will leave the 99 who are safe to save the 1 that is lost, even to the point of risking losing the 99. He is reckless in his love for us. He has no gauge of danger. He is utterly unconcerned for the regard of his own safety or comfort. He gave up his own son and endured the loss of a child to save us. Could you imagine giving up a child?
He love is fierce for us. It’s reckless. Unfathomable. Overwhelming. Unexplainable. Undeniable. He’s a father that never gives up.
All you have to do is look back at those key times in your life and you’ll see his fingerprints all over it.
Ok, rant over. You guys know me and my heart. Sometimes I just gotta share, then hope and pray it touches someone that needs to hear those words. 🙂

First off, they are made with only 4 ingredients. Woot Woot! Coconut Milk. Chocolate. Vanilla Extract. And fresh Raspberries. It seriously can’t get easier than that. Roll them in whatever you’d like for an extra layer of flavor and texture or serve them plain. Personally I like it rolled in toasted coconut or chopped nuts.
These truffles are perfect to bring to your next party, to serve at your christmas cookie table, give as a holiday gift to neighbors or friends …. or for a valentines day treat for your sweetie. The possibilities are endless. You just need to make sure you make them. I guarantee you’ll regret it if you don’t. I make these every year, and every year I love watching peoples faces as they take the first bite and then grab that 2nd or 3rd truffle.

- Serving size: 1 truffle
- Calories: 107
- Fat: 8 g
- Saturated fat: 5 g
- Carbohydrates: 10 g
- Sugar: 7 g
- Sodium: 1 mg
- Fiber: 1 g
- Protein: 1 g
- Cholesterol: 0 mg
- 12 oz. dark chocolate chips (get 80% cacoa or higher)
- 7 tablespoons of coconut milk (from a can of coconut milk, I use Thai Kitchen brand)
- 1 teaspoon vanilla extract
- ⅓ cup fresh raspberries, pureed
- toppings to roll in: chopped nuts, unsweetened coconut flakes, cocoa powder
- Add chocolate chips, coconut milk, and vanilla to a microwave safe bowl.
- Melt the chocolate in 30 second increments until the chocolate is completely melted and the mixture is smooth.
- Add fresh raspberries to a small food processor. Blend the raspberries until they look like a puree.
- Add raspberry mixture to the melted chocolate. Stir everything together.
- Cover the bowl and place in refrigerator for 2-3 hours.
- Remove from the refrigerator and roll the chocolate into 1" balls.
- Optional: roll in the toppings of your choice, I used chopped hazelnuts, unsweetened coconut flakes and cocoa powder.
