Creamy custard-like Coconut Panna Cotta topped with a tart Raspberry Blackberry Compote, it’s one incredible dessert that you won’t feel an ounce guilty eating!

So this week was my first official week working with my husbands company.

They needed a little help in their HR department as well as in their Accounts Payable and luckily I have experience in both so it was the perfect fit for just a couple hours a week.  On top of the HR & AP responsiblities I will be helping with the SEO side of things for their online business.

Anywho, I didn’t think it would be that big of a deal to have Cason with a babysitter 2 days a week. I was already doing it one day a week to work on my blog every once in a while, so I didn’t think it would affect me too much or him for that matter. But after this first week of being away two days from my little man I am realizing I am pretty pathetic and miss him like crazy!

Then to compound things, yesterday Cason and I were going out to run a couple of errands. We had stopped at a light and out of nowhere he says “I missed you mommy” and had a huge smile.

I wasn’t sure if I heard it right so I turned down the radio a little bit and said “What did you say buddy?”

He repeated it….”I missed you mommy.”

My heart just melted and my eyes started to fill with tears as we were driving.

Sooo precious! Love that little man!

I don’t know how you working moms do it … being away from your kiddos all day. I just had 16 hours away this week and I missed him like crazy. Ugh….

Now that I’m working again I’ve had to try and figure out when to make/test recipes for the ya’ll, when to take photos, edit photos, and then actually write the post.

It can get a little stressful. But something that is not stressful  … this Coconut Panna Cotta!

Its creamy, tropical, sweet, tart… and absolutely delicious!

OH… and its sugar free and dairy free!

UM… Win!

On a serious note though, instead of heavy cream, which Panna Cotta normally calls for, I used Coconut Milk which is quickly becoming my new favorite substitute. Then I used honey instead of sugar. The Coconut Panna Cotta could totally be eaten alone but since its berry season and all I thought I would add a sweet Mixed Berry Compote on top.

The tartness of the raspberries and blackberries complements the creamy coconut custard perfectly.

After shooting photos of this amazing dessert so I could post it for ya’ll today I was uber excited to finally give it a try.  But my husband beat me to it., on a side note I must be slow because Cason beat me to the chocolate on those Chocolate Peanut Butter Banana Popsicles the other day! 🙂

As soon as he took a bite his eyes rolled up in his head and all I heard was .. “babe….” {in Mike language that means “this-is-amazing-and-I-need-to-finish-the-rest-of-it-right-now-and-have-you-make-another-batch-tomorrow”}

That was all I needed, I grabbed the other parfait dish and OMG … seriously so good!

Coconut Panna Cotta with Mixed Berry Compote

Description

This Coconut Panna Cotta with Mixed Berry Compote is a healthy Paleo, dairy free and sugar free recipe. Filled with raspberry, blackberry and coconut flavors, it’s refreshing and delicious!


Ingredients

Scale

Coconut Panna Cotta:

  • 2 cups of full fat coconut milk, separated
  • 1 1/2 teaspoon of unflavored gelatin
  • 1 teaspoon of vanilla
  • 2 tablespoons + 2 teaspoons of raw honey

Mixed Berry Compote:

  • 3/4 cup of fresh raspberry
  • 1/2 cup of fresh blackberry
  • 1/4 cup of water
  • 1/4 cup of honey
  • 1 tablespoon of arrowroot

Instructions

  1. Add 1 cup of coconut milk to a medium saucepan along with unflavored gelatin.
  2. Let sit with heat off for about 10 minutes, until the gelatin starts to become soft.
  3. Heat saucepan to medium high heat, add remaining 1 cup of coconut milk and honey. Whisk together until ingredients are dissolved.
  4. Remove pan from heat and whisk in vanilla extract.
  5. Let panna cotta sit for 10 minutes to cool down.
  6. Pour coconut mixture into 4-6 serving dishes.
  7. Cover each dish with plastic wrap, making sure wrap does not touch the coconut mixture. Store in refrigerator for 5 hours or until panna cotta has set.
  8. In the meantime, in a small saucepan over medium heat add water, honey, and arrowroot. Whisk together.
  9. Next add in fresh raspberries and blackberries.
  10. Stir and let simmer for 10 minutes. Remove from heat and store in refrigerator until cooled.
  11. Serve panna cotta with mixed berry compote.

  1. Aww Krista, that is so sweet of Cason!! It must be hard to leave him now that you are working a few days a week. But I’m sure it will get better as time goes by. As far as this panna cotta goes, what a great idea! I love the coconut substitute. Panna cotta is such a great dessert and I love how you dressed this up with some berries šŸ™‚






    1. Yeah, I agree. It was just my first week so it hit me hard, at the end of the day I know its good for me and for him. Just hard in the beginning. šŸ™‚
