Every night after dinner I get this question.

“Mommy, can I have dessert?”

And every night, I smile and my eyes roll (because it’s the same question every day … a person could go crazy with the same question) and I ask him. Did you finish dinner?

Most times the answer is yes, because my little man can eat. But I have “trained” him over the years to know not to even ask if he hasn’t finished his food. Dessert is a special thing, not a required meal at our house.

My husband likes to call me the “sugar nazi.” But honestly, when it comes to my littles I DO want to be a sugar nazi. I don’t want them to overdose. Sugar is in enough things these days so I do “ration it.” Usually I let him have one dessert a day which is probably still more than most parents and way less than others but I whatever.

I don’t feel as bad when they are desserts that I make.

And these Dairy Free Coconut Berry Popsicles are definitely guilt free.

One of Cason’s favorite desserts to have are popsicles. I’m not sure if it’s the cold mouth feel or the fact that it lasts a long time while you’re slowly sucking it down. But it’s his go-to none the less.

Now that summer is here I have a popsicle making assistant. And my little guy is all about assisting. He likes to help make the recipe as well as taste test throughout and afterwards. (smart man)

For these popsicles I was aiming to create a fun yet healthy recipe you could make for the 4th of July. So of course I had to go Patriotic colors. Duh!!!

These Red, White and Blue popsicles are filled with raspberries (red), blueberries (blue) and blackberries (blue-ish … but Cason insisted that we take them out because they aren’t really blue mommy). None the less the more berries the better! Then I made a quick vanilla bean coconut milk mixture to pour over the top and fill in all those holes the berries left.

These Coconut Berry Popsicles are creamy, slightly sweet and you’ll love the pop of tart you get from each of the berries. It’s easy to make, dairy free and refined sugar free.

But most of all, completely and utterly satisfying to those of us with a sweet tooth.

My little man couldn’t wait to get his hands on these so he could devour them! As soon as he did, he had pure popsicle bliss!

Description

Paleo Berry Coconut Popsicles a sweet refreshing summer treat that’s easy to make! These creamy Coconut Popsicles are filled with tart berries and finished with a vanilla bean coconut mixture.


Ingredients

Scale
  • 1 3/4 cup coconut milk (use coconut milk from the can and just use the creamy part on top, not the water)
  • 1 1/2 teaspoons vanilla bean paste
  • 3 tablespoons honey
  • 1/4 cup fresh raspberries
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh blackberries

Instructions

  1. In a small bowl whisk together coconut milk, vanilla bean paste and honey.
  2. Evenly distribute the fresh fruit into 8 popsicle molds.
  3. Pour coconut milk mixture in each mold over the berries until each mold is full.
  4. Place the top on and add popsicle sticks to each mold.
  5. Freeze for 4 hours or overnight.
  6. Serve when ready.

  1. Would vanilla extract work in lieu of the vanilla bean paste? I’m having a hard time finding the paste in my local stores.
