Patriotic Cheesecake Stuffed Strawberries – an easy healthy recipe that tastes like strawberry cheesecake but without all the calories! Woot Woot! No fat pants needed here!
Ya’ll. I cannot believe that tomorrow is the day we have movers coming to the house. It is kinda surreal. Everything has happened so fast.
We got the call on March 30th that we needed to move. We searched like crazy for a solid week, found a house, bought it and now to think we are at the point of moving in already is absolutely crazy! I can’t even begin to tell you how excited I will be to be IN the new house and just sit down.
Although, truth be told. I’ll probably have the house unpacked in 24 hours, just because that’s my personality! I can’t handle the boxes, I want to have things set up. I want to know where my clothes are, where my candles are, where my spices are. I can’t handle living out of boxes just like I can’t handle living out of a suitcase!
And in this house I will want to have it set up. The last house we were in we knew it was going to be temporary, so we really didn’t set up a lot. Decorations, Photos on the wall, etc. This go around, we expect to be there for 3-5 years or more. Who knows what will happen.
It’s a beautiful house and the kitchen is ah-mazing!
I think that’s the part I’m the most excited about. I might even be able to take photos in this kitchen instead of setting up a makeshift photo area in the middle of my living room. Woohoo!
The other “area” I’m the most excited about is the outside patio. We’ve never had a covered patio before. But this time we have a covered patio WITH a fan! It’s the little things. I can’t wait to sit out there with Mike after Cason’s gone to bed, open a bottle of wine and just chat. Or sit out back this summer watching the kids run around while we have a backyard BBQ party with friends!
And one of the first things I’m going to make at that BBQ party are these CHEESECAKE STUFFED STRAWBERRIES!
Not only are these strawberries crazy easy to make, healthy, and only 106 calories a serving. But ya’ll they straight up taste like strawberry cheesecake! It’s absolutely amazing! And you’ll love the pop of tartness from the blueberry.
So basically you can go ahead and add this recipe to the other 21 summer dessert recipes I posted last week and be happy all summer long!
On a side note, what I love about these Cheesecake Stuffed Strawberries is how fun and festive they are. Ahem… we do have Memorial Day, 4th of July and then Labor Day coming up and these would be a fun HEALTHY recipe to make. Just sayin.

- Serves: 30-40 stuffed strawberries
- Serving size: 4 stuffed strawberries
- Calories: 106
- Fat: 7 g
- Saturated fat: 2 g
- Carbohydrates: 11 g
- Sugar: 8 g
- Sodium: 91 mg
- Fiber: 1 g
- Protein: 3 g
- Cholesterol: 29 mg
- 1 pint of strawberries, halved
- 1 pint of blueberries
- 5 oz. plain greek yogurt
- 8 oz. cream cheese
- 1½ tablespoon honey
- 1½ teaspoon vanilla bean paste (or vanilla extract)
- 1 teaspoon lemon zest
- In a small bowl add greek yogurt, cream cheese, honey, vanilla bean paste, and lemon zest. Using a hand mixer, blend until the mixture is smooth (like cheesecake) and there are no lumps.
- Add cream cheese mixture to a ziplock bag, close it, and then snip off the end to create a make shift pipping bag.
- Squeeze about 1 tablespoon of the cream cheese mixture on each strawberry half. Top with a blueberry.
