It’s that time of the week again. Helping Hubbie Time.
For those of you who are new and joining us, “Helping Hubbie” happens once a week here at Joyful Healthy Eats. It basically came about when I had a rough week and wished that Mike had a few recipes up his sleeve so I could take the night off. Sometimes a girl just wants a break … ya know! Enter “Helping Hubbie” Friday. 🙂 On a side note: I would love to know what kind of dishes you wish your husband could make? Who knows maybe it will be the next Helping Hubbie Post.
Ok, we have been building to your husband or significant others recipe collection the past couple of weeks. This week we are adding another side dish, Grilled Corn with Chipotle Honey Lime Butter. There is nothing better than grilled corn…. oh wait… yes there is… Grilled Corn with Chipotle Honey Lime Butter! I promise after you taste this you will never go back to the normal way of making corn.
To get started. Soften 1 stick of unsalted butter. Add zest from one lime to butter.
Helping Hubbie: Grilled Corn with Chipotle Honey Lime Butter
Chop up 1 small chipotle pepper from a can of chipotle peppers in adobe sauce. (I use La Costeña brand)
Add chopped chipotle peppers, 1/2 T. of honey, juice from half a lime, and 1/2 tsp. of salt to butter.
Mix together until all ingredients are combined. Now, it’s time to hard the butter again. Place ball of butter on a square of plastic wrap.
Roll the plastic wrap completely around the butter and form into a cylinder shape. Place in refrigerator.
Take shuck off the corn and place corn on medium heat grill.
Grill for about 15 minutes, turning every 2-3 minutes to be sure to grill each side evenly. Take off the grill and serve with a dab of Chipotle Honey Lime Butter.

Hey Suz! So glad you stopped by from MondayFunday! I will say “hurry up summer time for you” but “slow down summer time” for me. We end up getting 100+ temps here in Texas so I’m always praying for fall and winter time to come. Anywho… I hope you can get the grill out soon! 🙂
