Quick Easy Banh Mi Lettuce Wraps a low carb version of the famous Banh Mi Sandwich! Asian inspired turkey meatballs served on a lettuce wrap with pickled vegetables and sriracha mayo! It’s dinner perfection!

All I have to say is …

GIMME ALL THE PICKLED VEGETABLES!

I could eat pickled vegetables on almost everything, and honestly I kinda do. That zing you get from the vinegar adds so much to a dish or a sandwich. Heck I put them on eggs y’all. I’m obsessed!

Which is why making a Banh Mi Sandwich was a no brainer. Banh Mi sandwiches are a classic Vietnamese sandwich served on a toasted baguette and then stuffed with various savory ingredients!

So, what makes a good Banh Mi Sandwich?

  1. Lots of pickled vegetables.
  2. Creamy Sriracha Aioli (essential sriracha mayo)
  3. Fresh Cilantro for that “fresh herb” factor.
  4. A flavorful protein – usually banh mi’s are made with pork but today we are making turkey meatballs.
  5. A crunchy bun…. but since we’re going low carb we’re usually lettuce cups.

Putting the flavors together on this one made me do a little happy dance. I do that when I cook, and really do that after I taste and realize I’ve nailed the recipe.

Today… I NAILED the crap out of this recipe. There are three main elements I focus on –> pickled veggies, turkey meatballs and sriracha mayo. You’ll see that in the breakdown in the recipe.

How to do a quick pickle on vegetables?

  1. Stuff a mason jar with sliced up veggies (I used daikon radish and carrots but you would use whatever you’d like)
  2. Pour a vinegar mixture (with salt & sugar) over the veggies. I did this cold but you can also heat up the vinegar over a stove top, you’ll just have to wait for the veggies to cool down before you serve.
  3. Cover and seal the mason jar tight then let the veggies sit in the vinegar mixture for at least 30 minutes.
  4. You’re done! So easy!

Next up was the turkey meatballs. These bad boys are filled with fresh ginger, garlic, fresh cilantro and green onions. Honestly I think the green onions and ginger were the kicker here. Once the meatballs were formed, I sautéed them in toasted sesame oil for another layer of flavor that adds a nice “nuttiness” to the meatballs. Swoon!

Now, for the final touch. SRIRACHA MAYO. Y’all, I could put this on everything. It’s so easy to make too, just two ingredients. Are you ready for it? It’s mayo and sriracha. That’s it. You just have to make sure that the balance is perfect. And believe me, this balance is perfection! A little drizzle of this sriracha mayo over these Banh Mi Lettuce Wraps takes each bite over the top!

I served this recipe for a quick easy weeknight dinner but it could definitely be an appetizer as well.

Every bite of these Banh Mi Lettuce Wraps screams heaven. They are tangy, spicy, creamy and savory all in one. You’re going to be obsessed. Believe me. They are most definitely a show stopper.

Description

Quick Easy Banh Mi Lettuce Wraps a healthy low carb version of the famous Banh Mi Sandwich! Asian inspired turkey meatballs served on a lettuce wrap with pickled vegetables and sriracha mayo! It’s dinner perfection! 


Ingredients

Scale

Turkey Meatballs:

  • 1lb ground turkey
  • 1 tablespoon fresh minced ginger
  • 3 garlic cloves, minced
  • 1/4 cup fresh cilantro
  • 3 green onions, sliced
  • 1 egg white
  • salt
  • 1 tablespoon sesame oil

Pickled Vegetables:

  • 1/2 cup daikon radish, sliced into matchsticks
  • 1 1/2 cups matchstick carrots
  • 1/2 cup rice wine vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Sriracha Mayo:

  • 1/3 cup mayo
  • 2 1/2 teaspoons sriracaha

14 cups of lettuce


Instructions

Pickled Vegetables:

  1. To a large mason jar add daikon and carrots.
  2. To a small bowl add rice wine vinegar, water, sugar and salt. Stir until the sugar is dissolved.
  3. Pour the vinegar mixture over the vegetables. Cover with a lid and seal. Let sit for at least 30 minutes.

Sriracha Mayo:

  1. To a small bowl mix mayo and sriracha until well combined. Set aside.

Turkey Meatballs:

  1. To a large bowl add turkey, ginger, garlic, fresh cilantro, green onions, egg white and salt. Using your hands mix everything together so it’s all incorporated. Then form 14 meatballs. Set aside.
  2. Heat a large skillet to medium high heat. Add sesame oil to the pan and then meatballs, you want to hear a sizzle when the meatballs hit the pan. Sear each side for 3-4 minutes, until slightly browned and cooked through.

Assemble Lettuce Wraps:

  1. To each lettuce cup add one meatball, a tablespoon of pickled vegetables and a drizzle of sriracha mayo.
