Baked Garlic Parmesan Potato Wedges

Girls. Why can’t we just be confident in where we’re at? Why do we have to compare and contrast everything? Our body. Our family. Our husbands. The fun we have, or don’t have. Date nights. Jobs. Success. Our friends. How well kept our home is.

Doesn’t it get exhausting! I know I’m exhausted just typing it.

So why do we do it. Why can’t we be content with where we’re at. Or confident with the things the Lord has blessed us with.

I have struggled with self confidence since I was little. And the other day I had this moment of, how am I going to teach my daughter to be confident in herself if I, as her mother, can’t be confident in myself! Times, and when I say “times” I mean expectations and things we as a society elevate, are way worse now then what they were when I was growing up.

In that moment I just decided. Screw the negative thoughts, the second guessing if I look “cute” or if my blog is successful. I’m going to choose to LOVE who am I and where I’m at! I’m gonna rub my pregnant belly and know that I have a human growing in my belly that is a miracle and a gift from God. I’m going to put the time I HAVE towards my blog, and not over extend myself to try and reach some outrageous goal. I’m going to be confident and content.

Honestly half of the battle is just choosing to think differently. To dismiss those negative thoughts that come into your mind as false. To reject them and replace them with the truth or with things that bring you up.

I remember having to do this when I was struggling with fear when we first got married. Those thoughts of fear came into my mind and it was a hard very conscious effort to dismiss them, despite how real they felt. Then to replace those thoughts with other more positive thoughts!

So basically I’m applying the same principle to building my self confidence! Positive in. Positive out!

Speaking of positive. Let’s talk about these Garlic Parmesan Potato Wedges, shall we?

Why I Love Potato Wedges

So basically I’ve been kinda into potato wedges lately, as you can see from the Loaded Sweet Potato Wedges I posted just a couple weeks ago! First off, you can hold them in one hand which makes them the perfect finger food. They are super easy to make. They can be either an appetizer or a side dish and you can top them with anything you’d as long as you have the basic “crispy potato” part down.

And believe me, these are most definitely crispy!

How to Make These Tasty Potato Wedges

These potato wedges are tossed in a olive oil based spice rub filled with fresh garlic then topped with shredded parmesan cheese. Once they’re in the oven the skin starts to get all crispy and the parmesan melts into the potato. Basically turning into potato “crack” and all you want to do is devour every last one of these babies!

The hardest part is waiting for them to get out of the oven because while they’re baking your house smells like garlic parmesan heaven!

Once the potato wedges are done, top them with freshly chopped parsley or chives and dive in! (optional: dunk them in some ranch if you’re a sauce person… like my son)

Description

These Baked Garlic Parmesan Potato Wedges are seasoned to perfection and roasted in the oven until they’re tender and crispy. They’re such a delicious appetizer or side dish recipe!


Ingredients

Scale
  • 4 large russet potatoes, sliced into wedges (should get about 8 wedges per potato)
  • 4 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 1 cup shredded parmesan cheese
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Preheat oven to 400 degrees.
  2. Prepare a baking by spraying it with cooking spray. Set aside.
  3. In a small bowl, add minced garlic, smoked paprika, sea salt, ground black pepper and olive oil. Mix together.
  4. Add potatoes to a large bowl. Pour garlic mixture over the potatoes. Using your hands, toss the potatoes to coat with the garlic mixture.
  5. Place wedged potatoes on a baking sheet, skin side down.
  6. Sprinkle each potato wedge with parmesan cheese.
  7. Bake for 30 minutes, until wedges are fork tender.
  8. Garnish with chopped parsley.
  9. Serve!
