Bacon Wrapped Tenderloin Bites

What You’ll Need

The creamy horseradish sauce is sweet and spicy thanks to a bit of honey. Scroll to the recipe card at the bottom of the post for exact amounts.

  • Bacon – Thick-cut bacon holds up better on the grill.
  • Beef tenderloin pieces – Ask your butcher to chop them up for you.

For the Horseradish Sauce

  • Plain Greek yogurt – Make sure it’s unsweetened.
  • Prepared horseradish – Use your favorite.
  • Shallots – These can be swapped for more garlic.
  • Stone ground mustard – Dijon mustard is a great swap.
  • Garlic – Feel free to use garlic paste. Avoid garlic powder because it’ll make the sauce grainy.
  • Honey – Go for raw honey or agave nectar.
  • Salt and pepper – Kosher salt and freshly-cracked black pepper are best.

How to Make Bacon Wrapped Tenderloin Bites

Don’t forget to soak the skewers otherwise they’ll burn once they hit the grill. Scroll to the recipe card at the bottom of the post for more detailed instructions.

  • Preheat Oven. Preheat the oven to 450F.
  • Whisk the sauce. Mix the yogurt, horseradish, shallots, mustard, garlic, honey, salt, and pepper in a small bowl until smooth. Set it aside.
  • Wrap them. Take each piece of beef and wrap a small strip of bacon around it. Secure it in place with the soaked skewers or toothpicks.
  • Season the beef. Once the steak is wrapped, season all sides of the bacon and steak bites with salt and pepper.
  • Sear them. Heat a skillet to medium high heat and add the bacon-wrapped tenderloin bites steak side down. Sear for 1-2 minutes per side.
  • Finish in the oven. Remove steak bites from the pan and place on a baking sheet, bacon side down. Bake for 2-3 minutes, flip to cook on the other side for another 2-3 minutes.
  • Serve. Remove them from the oven and let them cool for 5 minutes. Serve with the prepared horseradish sauce. Enjoy!

Tips & Variations

Keep them simple or add some shrimp if you really want to impress your guests.

  • Make them spicy. Slice a large jalapeño into 1/4″ thick slices. Place a slice on top of each tenderloin bite before wrapping it in bacon. Grill as usual for a kick of heat.
  • Go for store-bought. Save some time by using a low-sodium store-bought horseradish sauce.
  • Make it surf-and-turf. Place a medium-sized shrimp on top of each piece of beef and wrap them with bacon as usual for a yummy variation of this recipe.
  • Add seasonings. Toss the beef with 2 teaspoons garlic powder, paprika, onion powder, or taco seasoning for extra flavor.

  • Fridge: Place them in an airtight container for up to 5 days. The sauce can be stored for up to 7 days.
  • To reheat them: Microwave them for up to a minute or until warm. You can also heat them in a pan (covered) over medium-high heat for 7-8 minutes.

Description

Ingredients

Scale
  • 24 beef tenderloin 1″ cubes
  • 1 lb thin sliced bacon, cut in half
  • 1 tablespoon avocado oil
  • salt and pepper

Horseradish Sauce:

  • 1/2 cup plain greek yogurt
  • 1 tablespoon prepared horseradish
  • 1 tablespoon minced shallots
  • 1/2 teaspoon stone ground mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon honey
  • salt & pepper to taste

Instructions

Make Sauce:

  1. To a small bowl add yogurt, horseradish, shallot, mustard, garlic, honey, salt and pepper. Whisk together until combined.

Bacon Wrapped Tenderloin Bites:

  1. Preheat oven to 450°F.
  2. Pat tenderloin dry with a paper towel. Wrap each steak cube with bacon and secure with a toothpick.
  3. Season the prepared steak bites with salt and pepper.
  4. Heat a skillet to medium high heat. Add avocado oil to the pan as well as steak bites, steak side down. Sear for 1-2 minutes per side.
  5. Remove steak from skillet and place on a baking sheet with the bacon side down. Bake for 2-3 minutes, flip the steak bites over to cook on the other bacon side, and bake for another 2-3 minutes. Remove and let rest.
  6. Serve alongside the yogurt horseradish sauce.

    1. haha… very true! You could. I would make sure to put them on a wire rack on top of the baking sheet, so they don’t stick to the baking sheet. Maybe cook it at 350, for 15 minutes or so, at least start there. It may need more or less.
