Oatmeal Waffles are a delicious start to any morning, especially when they’re topped with a fresh strawberry vanilla bean compote. They’re crispy on the outside, fluffy on the inside, and all around perfect!

A while back, my sweet sister-in-law made us these amazing oatmeal waffles when we were visiting her in Arizona. They are so light and airy, and have a little dash of cinnamon to make them warm and cozy too. I wanted to recreate them at home, so I improvised and made my own version with the tastiest strawberry compote on top. You could use maple syrup, but trust me: make the compote. You won’t regret it!
Freshly made waffles might not be on the agenda every morning, but make a big batch of these oatmeal waffles (or my Whole Wheat Lemon Blueberry Waffles!) and freeze the extras and you can fancy up your breakfast any day of the week!

What You’ll Need

Oatmeal Waffles:
- White whole wheat flour – Or use all-purpose flour if that’s what you have on hand.
- Quick cooking oats – These mix better into the batter than old-fashioned oats.
- Baking powder
- Ground cinnamon and nutmeg – These add some warm flavor to the waffles.
- Salt
- Eggs – If you have time, let the eggs come to room temperature. They’ll hold more air when beaten, which means lighter, fluffier waffles.
- Milk – Any kind you have in the fridge.
- Coconut oil
- Brown sugar – Light or dark brown sugar both work.
Strawberry Compote:
- Strawberries – If fresh strawberries aren’t in season, frozen strawberries are fine! Just thaw them first.
- Water
- Raw sugar
- Lemon – You’ll need both the juice and the zest.
- Madagascar vanilla bean – Vanilla bean paste also works.
- Arrowroot – This thickens the compote. You can use cornstarch if you prefer.
How to Make Oatmeal Waffles
If you’ve made waffles before, this recipe will be a cinch. And even if you haven’t made waffles yet, they will still be a cinch! Here’s an overview of the steps involved.
- Make the compote. Whisk the water, sugar, lemon juice and zest, vanilla bean, and arrowroot in a saucepan over medium-high heat. Add the strawberries and simmer for 5 minutes, until the compote thickens.
- Mix the dry ingredients. Whisk together the flour, oats, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- Mix the wet ingredients. In another bowl, whisk the eggs, milk, coconut oil, and brown sugar.
- Finish the batter. Stir the wet mixture into the dry mixture.
- Cook the waffles. Pour the batter into the waffle maker, following the manufacturer instructions.
- Serve. Plate the waffles with the compote.
Tips and Variations
Here are some tips for making the best waffles—and how to make this recipe your own.
- Make sure your waffle maker is heated. Preheat your waffle maker before adding the batter to ensure even cooking and a crisp exterior.
- Don’t overmix the batter. Stir just until the ingredients are combined to avoid tough waffles.
- Add almond extract. Swap out the vanilla bean in the compote for almond extract for a different flavor profile, or use vanilla bean with a splash of almond extract.
- Don’t check on your waffles until they’re done. Resist the urge to open the waffle maker too soon, as this can cause the waffles to tear.
How to Store and Reheat Leftovers
- Refrigerator: Store leftover oatmeal waffles in an airtight container or zip-top bag in the refrigerator for up to 4 days.
- Freezer: Place cooled waffles on a baking sheet in a single layer and freeze until solid. Then store them in a freezer-safe zip-top bag for up to 3 months.
- To reheat: Pop frozen waffles into the toaster or warm them in the toaster oven, air fryer, or regular oven at 375ºF until crisp and heated through.

- 3 teaspoons of baking powder
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
- 2 eggs, lightly beaten
- 1 1/2 cups of milk
- 6 tablespoons of coconut oil, melted
- 2 tablespoons of brown sugar
Strawberry Vanilla Compote:
- 16 oz. of strawberries, quartered
- 1/4 cup of water
- 1/4 cup of raw sugar
- zest from 1 lemon (1 teaspoons)
- juice from 1 lemon (2 tablespoons)
- 1 Madagascar Vanilla Bean Stalk, remove the vanilla beans from the stalk
- 1 tablespoon of arrowroot
Instructions
Strawberry Compote:
- In a small saucepan, over medium high heat add water,sugar, lemon juice, lemon zest, vanilla bean, and arrowroot. Use a whisk to blend together.
- Next, add strawberries and bring to a simmer.
- Simmer for 5 minutes or until the strawberries are softened and the sauce has thickened. Set aside.
Oatmeal Waffles:
- In a large bowl, add flour, oats, baking powder, cinnamon, nutmeg, and salt.
- In a small bowl mix together eggs, milk, coconut oil, and brown sugar.
- Slowly add in the wet mixture to the dry mixture. Stir until combined.
- Pour batter into waffle maker {spray with cooking spray if the waffles are sticking}
- Close lid and cook until done. It should be crisp and browned on the outside, tender on the insdie.
- Serve waffles with strawberry vanilla compote on top.
- Optional: garnish with a dollop of whipped cream
