So remember when I told you that besides getting a Spiralizer to make Zucchini Noodles the other thing I wanted was a Waffle Maker?

A while back, when Mike and I went to Arizona, my sweet sister in law made us these amazing oatmeal waffles. They are so light and airy, and have a little dash of cinnamon in them. I have been dreaming of them since, now that I have a waffle maker it was game on! I didn’t have the recipe so I tried to improvise and make my own version.

This Whole Wheat Oatmeal Waffle recipe is perfect. It is crunchy on the outside and moist and light on the inside. Paired with the homemade Strawberry compote made with fresh vanilla bean and lemon zest, it is absolutely delicious. And if you put a little dab of whipped cream on top .. don’t worry .. I won’t judge you. In fact, I may join in. After all, whats the fun of eating healthy if you can’t have an occasional sweet treat! Right?!?

Using the Waffle Maker for the first time was a blast too, Cason and I were waiting intently for the green light to come on and let us know the waffles were done! 🙂 Great Saturday morning breakfast time with the family and so easy have the kiddos help out with the cooking process!

    1. Ohh.. thanks Michelle you are too sweet! I thought I saw a conversation going on between you and someone else about this recipe. So glad you stopped over to say hey, love meeting my new followers and feel so honored to have. 🙂 Hope you had a chance to make it this weekend, I think we are going to make it again this next weekend. So yummy!

  2. Hooray for getting a waffle maker. My guys love making waffles. I should change that to love having me make them waffles. 😀 These look fantastic and I love oatmeal waffles.
Where do you live in Texas? I can’t tell you how many times I’d look outside, think it looks beautiful and want to sit outside. I’d only last a few minutes. I love it down by the coast where you get a nice gulf breezes. They also help keep the bugs away. 😀

    1. I know right! So fun! 🙂 Love waffles in the morning… just makes you feel special!

We leave about an hour and a half from the coast, so its basically just hot. NO breeze. 🙁 But I still love it!

    1. Oh the Madagascar vanilla bean was totally amazing in the compote. These may be happening again this weekend! So good, and any excuse to use my waffle maker! 🙂

These waffles are fantastic! Not only are they healthy, but they taste great too. The oatmeal gives these waffles a nice chew. I do like the waffle base to be a little bit sweeter, so I’ll always add a little more sugar. You absolutely have to make the strawberry compote too!
