I am all about sauces, I think just a hint can take any dish over the top and some dishes NEED that touch of sauce!
My little guy takes after me. Although he takes being a “sauce lover” to a whole another level! When we go to Chick-fil-a this kid asks for Honey Mustard, BBQ Sauce, Chick-fil-a, Mayo, and sometimes even Ranch. Oh, he doesn’t stop there. He makes sure to dunk each chicken nugget in every sauce to make the ultimate concoction… what does he call it? Cason Chimichurri! (hand to forehead)
I think the most painful part of watching him eat is that sometimes he will dunk his apples in each and every sauce too.
Ughh….
Does it mean I fail as a food blogger if my son dunks apple slices in Ranch, BBQ, and Chick-fil-a sauce? I hope not! Let me make it up to you and redeem my status.
Meet my new sauce obsession! Romesco Sauce! If you haven’t had it before, be prepared to be amazed and finish licking your plate! Romesco Sauce is a spanish inspired sauce, it’s a nutty red pepper based sauce that is used to complement proteins like fish, chicken, or steak. You can even use it on top of veggies or as a dip for crackers or tortilla chips.
This sauce is so versatile and crazy easy to make. As in it takes less than 5 minutes. All you do is throw everything in the blender or food processor, blend until it’s your desired consistency and you’re done. I like mine smooth but with a little bite from the almonds.
Be sure not to skip on the almonds. The almonds make it thick and delicious. If you want to add a few less that’s fine, maybe start at 3/4 cup instead of 1 cup. The best part about this recipe is you can add more or less of whatever you like so that it’s JUST the way you like it!
Store this sauce in an air tight container and keep it in the fridge to have on hand. This is a great condiment option to put on literally anything, even your eggs or a sandwich!

A Quick & Easy Spanish Romesco sauce that can be used as a marinade, condiment, dip, or just eaten with a spoon!
Ingredients
- 1 cup raw almonds
- 12 oz. roasted red peppers, drained
- 1/2 cup fresh basil
- 2 garlic cloves
- 3 roma tomatoes, halved and seeds removed
- 2 tablespoons red wine vinegar
- 2 tablespoon olive oil
- salt and pepper to taste
Instructions
- Add almonds, roasted red peppers, basil, garlic cloves, tomatoes, red wine vinegar, olive oil, salt, and pepper to a food processor.
- Blend until your desired consistency. (I usually like it smooth with with a little crunch from the almonds)
- Serve with your favorite protein, eggs, as a dip, or on veggies. (or just eat it with a spoon)
