Epic Avocado Toast Recipes with Sweet Potato “Toast”
HAPPY NEW YEAR!!! Can you believe it? We are officially in the new year! Are you excited? Indifferent? Or nervous, about what this new year might bring?
The start of this year is a little different for me. Normally I’ve laid out my specific goals personally and business wise. I usually have an idea of the direction I’d like to move in. But with family in town, I honestly haven’t been able to get to that point just yet. This year I think I’d really like to have a vision for the direction this blog is headed and ultimately my goal behind it. I’d like to have more balance and intentional time with family as well as reaching out to more people in our community and church. What are you plans for this year?
What is Avocado Toast?
Avocado Toast is something that got popular in the past 5 years years. So what is it? Essentially it is the flesh of an avocado mashed up and spread on toasted bread. Some people also like to make thin slices of the avocado and lay it out on the bread neatly or serve it on sweet potato toast as a gluten free or paleo method.
Is Avocado Toast Healthy?
Yes, avocado is healthy. Avocado is a good fruit that is filled with healthy fats and nutrients that will help you stay full longer. It also has antioxidants which are great for immunity.
Is Guacamole Toast the Same as Avocado on Toast?
No. Guacamole has a lot more too it then just avocado. For guacamole on toast you’ll need to mix avocado, diced tomato, diced onion, garlic, diced jalapeño, cilantro, lime and salt. Then spread the mixture on the toast. Avocado on toast is either mashed up or sliced avocado spread out on the toast.
Can I Eat Sweet Potato Skin?
Yes, you can eat sweet potato skin. There are quite a few nutrients in the skin, such as potassium and fiber. If you really want to retain the nutrients, I recommend baking them or boiling them.
What is Sweet Potato Toast?
Sweet Potato Toast is kinda the new thing. Instead of using a classic slice of bread for toast, you would slice a sweet potato lengthwise and cook into to create a sweet potato toast.
Tips for Making Sweet Potato Toast:
These tips are essentially how to pick and slice your sweet potato so that you have the best sweet potato toast texture.
- Pick your Potato: Choose the largest roundest sweet potato. I find picking one that is a nice big shape helps with getting consistent pieces, but is also easier to slice.
- Slice them up: For sweet potato toasts, you’ll want to cut your sweet potato lengthwise. I like to use a sharp Chefs Knife, or for more consistent slices use a mandoline. I’d recommend making the slices 1/4″ to 1/3″ thick. Too thick and they will be mushy, too thin and they will be crispy.
- Bake them: For the best texture, bake my sweet potato slices on a parchment lined baking sheet and lightly brush them with avocado oil to give them that nice toasted feel.
How to Make Sweet Potato Toast
There are a couple of different methods to make sweet potato toast. Some people use a toaster and some use an oven. I find the best results are with an oven and then you can warm them or toast them back up in a toaster after you bake them first.
- Preheat oven to 425°F.
- Brush both sides of 1/4″ to 1/3″ sweet potato slices with avocado oil.
- Place on a parchment paper lined baking sheet.
- Bake for 5 minutes. Flip the sweet potato slices and bake the other side for 5 minutes.
- Remove from oven and rest.
This combo of avocado toast and sweet potato toast is my new favorite easy breakfast, lunch or post work out snack. I love that you can customize each piece of toast to what you’re feeling for that day and they are all easy to prep ingredients.
You could literally meal prep all of this and make them throughout the week!

Ingredients
- 1 large round sweet potato, sliced lengthwise into 1/4” to 1/3″ slices
- 1 teaspoon avocado oil
- 1 avocado, mashed
1. Pico Avocado Toast:
- 1/2 cup diced cherry tomato
- 1 tablespoon diced red onion
- 1 teaspoon fresh chopped cilantro
- 1 teaspoon lime juice
- salt to taste
2. Everything Bagel Avocado Toast:
- 1 tablespoon everything bagel seasoning
3. Fruity Avocado Toast:
- 1/2 cup blueberries
- 4 strawberries, sliced
- 1 teaspoon chia seeds
4. Soft Boiled Egg Avocado Toast:
- 2 soft boiled eggs (see below for directions)
5. Bacon Avocado Toast:
- 2 strips of bacon, cooked and diced
Instructions
- Preheat oven to 425°F.
- Brush both sides of sweet potato slices with avocado oil.
- Place on a parchment paper lined baking sheet.
- Bake for 5 minutes. Flip the sweet potato slices and bake the other side for 5 minutes.
- Remove from oven and rest.
- In the meantime, add avocado to a small bowl and mash.
- Top each slice of sweet potato with a tablespoon of mashed avocado and one of the below toppings.
Pico Avocado Toast:
- To a small bowl add, cherry tomato, red onion, cilantro, lime juice and salt. Toss to mix.
- Top each avocado toast with 2 teaspoons of pico mixture.
- Serve.
Everything Bagel Avocado Toast:
- Sprinkle each avocado toast with everything bagel seasoning.
- Serve.
Fruity Avocado Toast:
- Top each Avocado Toast with 4-5 blueberries, 1 sliced strawberry, and a sprinkle of chia seeds.
- Serve.
Soft Boiled Egg Avocado Toast:
- Fill a small saucepan with 1″ of water.
- Bring to a boil. Add 2 eggs to the pot and cover.
- Boil for 6 minutes and immediately add to an ice water bath to cool.
- Peel, slice in half and place on top of avocado toast.
- Serve.
Bacon Avocado Toast:
- Crumble cooked bacon and sprinkle over avocado toast.
- Serve.
