The Ultimate Grilled Peach Chicken Salad

This easy peach salad recipe is the ultimate summer salad! It’s loaded with fresh grilled summer peaches, juicy chicken, blueberries, creamy goat cheese, and crunchy pecans, drizzled with tangy honey mustard dressing. Make it in 30 minutes or less!

This juicy grilled peach salad recipe was the first thing I made when we returned from vacation. With summer on the brain, I set out to make the ultimate salad with char-grilled peaches and chicken (the best combo!), tangy goat cheese, crispy pecans, and fresh blueberries, since I had some in the fridge. Let me tell you, this peach salad is flipping delicious!

  • Chicken – I used boneless, skinless chicken breast for a leaner piece of meat. I think this peach salad would also taste great topped with juicy grilled shrimp!
  • Peaches – Fresh peaches, sliced in half or into wedges. See below for tips on how to choose the perfect ripe peaches for your salad.
  • Oil – I used grape seed oil for this recipe because I like the neutral flavor. Lightly brush the flesh side of the peaches with the oil. This helps prevent the peaches from sticking to the grill.
  • Greens – For this recipe, I used baby spinach leaves. You could make a peach and arugula salad, or swap spinach for your favorite salad greens.
  • Optional Toppings – Fresh blueberries, pecans, and sliced red onion. You can top this peach salad recipe with almonds, tomatoes, or any other add-ins you’d like.
  • Cheese – I love creamy, tangy goat cheese. You could substitute goat cheese with feta, shaved parmesan, or burrata for something different.

How to Tell When Peaches are Ripe

Since peaches are one of the star ingredients here, it’s important to know how to pick the good ones! Peaches get sweeter and juicier as they ripen. The best way to tell if a peach is ripe is to gently squeeze or press the shoulder of the peach, right next to the stem. If the peach gives a little bit to gentle pressure, it’s ready to eat. Or, in this case, grill!

What Dressing Pairs Well With a Peach Salad?

I dress this salad with an easy homemade honey mustard dressing (included in the recipe card). It’s similar to the dressings I use for my avocado chicken salad and strawberry avocado salad. I love the sweet-tangy contrast between the dressing, fresh and grilled fruit, and sharp goat cheese. If you wanted to swap out the dressing, I’d recommend my lemon vinaigrette.

How to Make a Peach Salad With Grilled Chicken

You can still prepare the chicken and peaches for this recipe even if you don’t have an outdoor grill! Use a grill pan or a regular cast-iron skillet instead. Here’s how to make the most delicious summer peach salad:

  1. Grill the chicken and peaches first. While the grill preheats to medium-high heat, season the chicken and lightly brush the cut sides of the peaches with oil. Grill the chicken for 5-7 minutes per side, until cooked through. Next, grill the peaches for 3-4 minutes, flesh side down. Look for the grill marks!
  2. Make the dressing. While the chicken rests, whisk ground mustard with Dijon, honey, apple cider vinegar, salt, and pepper to make the honey mustard dressing.
  3. Assemble the salad. Start with a bed of spinach, and add the blueberries, red onion, goat cheese, and pecans on top. Slice the grilled chicken, and arrange the chicken and peaches over the salad. Drizzle with dressing, or serve the dressing on the side, it’s up to you!

What to Serve With This Peach Salad Recipe

A big, family-style grilled peach salad loaded with tender chicken and tangy dressing is perfect for summer nights or backyard BBQs. Enjoy this salad alone or with bruschetta and a glass of crisp white wine as a starter. Or, serve it as a side salad with turkey burgers or juicy marinated steak kabobs. Storing Leftovers

Whenever possible, try to store any prepared salad toppings, like grilled chicken and peaches, separate from the rest of the salad. Leftovers will last in the fridge for a day or two, but the spinach does start to wilt with time, so enjoy ASAP!

Ingredients

Scale
  • 1 lb. boneless skinless chicken breast
  • salt & pepper to season
  • 6 cups baby spinach
  • 2 peaches, halved
  • 1 teaspoon grape seed oil (avocado or canola would work too)
  • 1/2 cup blueberries
  • 1/4 cup sliced red onion
  • 1/4 cup pecan halves
  • 1 ounce crumbled goat cheese
  • basil, for garnish

Honey Mustard Dressing:

  • 1 tablespoon course ground mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • salt & pepper

Instructions

  1. Preheat grill to medium high heat.
  2. Season chicken with salt and pepper on both sides.
  3. Lightly brush peach flesh with grape seed oil.
  4. Place chicken on grill grates and grill each side for 5-7 minutes, or until chicken is no longer pink. (depending on thickness)
  5. Place peaches on grill grates flesh side down. Grill for 3-4 minutes, or until there are grill marks.
  6. Remove both chicken and peaches from grill and let rest.
  7. In the meantime, to a small bowl add course ground mustard, dijon mustard, honey, apple cider vinegar, salt and pepper. Whisk to mix everything together. Set aside.
  8. Assemble Salad: to a large bowl add spinach, blueberries, red onion, goat cheese, pecans. Slice chicken and peaches and top the salad. Serve with dressing on the side.
