Easy Grilled Avocado Mango Chicken Salad a refreshing salad perfect for the summer! A light 30 minute meal loaded with nutrients and flavor!

Well, I finally started something I never thought a would.

Crossfit.

For the longest time I’ve steered clear from Crossfit. I’ve heard horror stories about it. That they push you too hard, have you lifting heavy weights before you’re ready. That they don’t teach you the correct movements and that it’s hard on your joints.

The list goes on. I’ve even heard that the people who go to Crossfit are like a mini cult.

Well, I’m here to tell you. It’s not the case! At least from what I know so far, granted I’ve only gone for about a week.

I decided to sign up because I knew that I needed a change in my workout routine if I wanted a change in my body. After having Maddie I wanted to build strength, not just keep doing cardio on the Peloton. (which I will still do, but wanted more) I also had a friend in our small group whose been doing Crossfit for years and she loves it. Her baby is 3 months older than Maddie and she has bounced back pretty well because of Crossfit. So I signed up. I figured having a buddy at the gym would be helpful too.

At this particular gym, when you sign up, you have to go through a 5 part elements class. In the class they go through every movement and lift that you do in Crossfit. They show you the proper form and then they have you do it. This allows them to watch your form so they correct as needed.

The Crossfit myths that’ve been broken for me already:

  • It is not a cult. It’s a family. There aren’t as many people at a crossfit gym compared to a regular 24 hour fitness gym so you know the people that you work out with well. And they hang out outside of the gym. It’s just a tighter nit group.
  • Proper form is everything. If you have it, you won’t get hurt.
  • A good coach is everything. If you have a good coach that you can trust (meaning they know their stuff and they know where YOU are at strength wise) it’s a game changer. They won’t push you beyond what they know you can handle which could lead to injury.

All in all. I’m glad I’m giving it a go. It’s different. I’m nervous and scared but curious to see the results. I’ll keep you posted.

Ok, moving on to this delicious Avocado Mango Chicken Salad. This salad actually came together one night because it’s what I had in my fridge to get rid of. I piled everything in a bowl, made a dressing, gave it to Mike for dinner and he loved it. He loved it so much that he told me I needed to put it on the blog. So… here it is .. for it’s big debut!

This salad is super easy to make and filled with all kinds of good fats and antioxidants with the blueberries, almonds, mango and avocado. You could even change up the protein in this (if you wanted) and use salmon instead of chicken to add Omega-3’s.

It’s a great easy and nutritious salad for the summer!

Description

This refreshing avocado salad recipe with grilled chicken, mango, and blueberries is the perfect 30-minute lunch with homemade dressing.


Ingredients

Scale
  • 1lb. boneless skinless chicken breast
  • salt & pepper to season
  • 6 cups baby spinach
  • 1 large mango, diced
  • 1 cup fresh blueberries
  • 1 avocado, sliced
  • 1/3 cup raw sliced almonds
  • 2 oz. crumbled goat cheese

Honey Dijon Dressing:

  • 2 tablespoons honey
  • 2 tablespoon stone ground mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon dry basil

Instructions

  1. Preheat grill to medium high heat (about 375-400 degrees F).
  2. Season both sides of the chicken breast with salt & pepper.
  3. Spray grill grates with cooking spray or rub down with olive oil soaked rag.
  4. Place seasoned chicken breasts on the grill. Grill each side for 5-7 minutes, until there is no longer any pink.
  5. Remove from grill and let rest for 3 minutes to let the juices redistribute.
  6. While the chicken is resting. In a small bowl add honey, mustard, apple cider vinegar and dry basil. Whisk to combine until the mixture is smooth and feels like a dressing.
  7. Slice the grilled chicken breasts.
  8. Assemble the salad: to a large bowl add spinach, diced mango, blueberries, avocado, almond, goat cheese and sliced chicken. Serve with honey dijon dressing on the side.
