That’s right folks. It’s the first pumpkin recipe of the season! And you’re gonna love it, one because it has pumpkin in it (duh) AND chocolate! It’s a Winner … all the essential ingredients. 🙂

Cason has his FIRST day of Mommy’s Day Out today. Which means, me packing his backpack, folder, lunches, snacks and all the fun stuff you need for Pre-k!

On a side note … my baby boy is in PRE-K!! When did that happen!?

One of the things that’s different this year compared to other years is allergies! In past years I haven’t had to deal with allergy issues in any of his classes. But this year there are nut allergies. So … no peanut butter!!! (insert crying emoji)

Luckily pumpkin is a great filler. Instead of adding peanut butter to these energy bites I just used pumpkin puree!

These energy bites are great for snacks throughout the day at school (ahem… or at work) and a great after school snack. They have 6 grams of fiber in each bite and 4 grams of protein! Plus they are pretty darn tasty AND  you get to say that you got your child to eat ground flax seed and chia seeds! Mom for the win!

Since #PSL is in season(for those of you not in the know Pumpkin Spice Latte’s have they own hashtag … sheesh), then I can post a Pumpkin Chocolate Chip Cookie Energy Bite!

We keep these energy bites and the Peanut Butter ones stocked in our refrigerator at all times. Instead of snacking on something you’re going to regret these energy bites are a great healthy alternative! Believe me, your body AND your taste buds will be thanking you for it later!

Description

Kick up your energy during the day with these easy healthy Pumpkin Chocolate Chip Cookie Energy Bites!


Ingredients

Scale
  • 2 cups regular oats
  • 1/2 cup ground flax seed
  • 1/2 cup honey
  • 1/2 cup pumpkin puree
  • 1 tablespoon chia seed
  • 2 teaspoon pumpkin spice mix
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Add oats, ground flax seed, honey, pumpkin puree, chia seeds, pumpkin spice mix, and vanilla extract to a food processor. Pulse until everything is combined. About 5-7 times.
  2. Pour mixture into a large bowl, add chocolate chips and knead to combine.
  3. Form into small 1″ balls and place on a baking sheet lined with parchment paper.
  4. Cover and place in refrigerator for 2 hours.
  5. Serve!
