Today is a special day because myself and couple of bloggy friends have decided to get together and throw Cathy over at Lemon Tree Dwelling a Virtual Baby Shower!
What does a virtual baby shower look like?
Well, normally for a baby shower you would have people bring food/snacks to eat and then gifts for the guest of honor.
So, today we are bringing Cathy food… and LOTS of it! The gift is that you click on over to Cathy’s site and congratulate her on her upcoming arrival. {while you’re there check out some of her recipes, she has definitely got some awesome food over there}
The food I decided to bring to this Par-tay today was a dessert option. But ya know, when you’re pregnant, you also have to be health conscious because everything you eat that baby eats! Motherhood starts as soon as that baby is forming in your belly not when the baby comes out.
This Mixed Berry dessert with Honey Maple Mascarpone is the perfect slightly sweet snack to satisfy that “get-me-a-32oz-chocolate-fudge-shake-or-else” feeling. It has just the right amount of sweet from the maple and honey added into the mascarpone. The creaminess from the mascarpone goes perfectly with the fresh berries and then paired with raw sliced almonds makes this a home-run dish for any dainty baby shower, fun summer bbq party, or just a weekend treat!
How to Make Mixed Berries with Honey Maple Mascarpone
To get started, wash 1 pint of raspberries, 1 pint of blueberries, and 1 pint of blackberries.
Once clean put them in a small bowl and toss together. In a small bowl mix 8 oz. of mascarpone cheese, 1 tablespoon of pure maple syrup, 1 tablespoon of raw honey, and 1 teaspoon of vanilla extract.
Mix together until completely combined. To put the dessert together, place 1/2 cup of the berry mixture together in a small serving bowl.
Top with 2 tablespoons of the Honey Maple Mascarpone mixture and sprinkle with raw sliced almonds. Serve!

Ingredients
- 1 pint of fresh raspberries

Honey Maple Mascarpone:
- 8 oz. of mascarpone cheese

Berries with mascarpone has always been my favorite dessert. As a child, I never liked chocolate (I know, shocker) so I always requested this simple dessert. It’s so flavorful and healthy at the same time. Pinned and making soon!
