Say hello to the Mean Green Smoothie Machine. That’s what I thought about calling this Smoothie… for like .2 seconds and then decided –> too cheesy.
That’s just the first thing that popped into my head, I think I was kinda in a weird mood. But don’t worry I’m over that now.
Our family has been on this smoothie kick lately, even Cason is joining in. The other day we bought huge bags of frozen fruit, loads of bananas and spinach and stuffed probably around 30 bags full of different flavored smoothies. Our outside freezer is packed with smoothie bags just ready to be devoured.
So to keep with our “January smoothie theme” today’s recipe is a Green Smoothie Bowl topped with fresh fruit, granola and toasted coconut. Although, you could top it with anything you’d like. That’s the beauty of smoothie bowls, they are customizable to what you like.
This Smoothie Bowl has 2 full cups of spinach in it and then I added in ground flaxseed for an extra measure of fiber goodness. Let’s just say if you didn’t have a healthy happy “gut” before, you will after this smoothie, if you know what I mean. (wink wink)
To counter balance all those greens I used frozen pineapple for sweetness, a banana to thicken the smoothie and frozen strawberries. (cuz let’s be honest, everything is better with strawberries) To bind everything together I used unsweetened vanilla almond milk and then a little bit of plain yogurt. My favorite yogurt is Siggis because it has live cultures in it, to further help with gut health. Happy gut, happy life. 🙂 hehe
You could add in a scoop of protein powder to boost up the protein in this smoothie a little more and it would make a great pre-workout snack or post workout snack. Top it with more fresh fruit, granola, nuts, chia seeds, dry fruit or peanut butter and you’ll be one happy camper.
It really is the perfect way to start the morning. Not only is it delicious and refreshing. But as funny as it sounds, if you start off your day healthy you’ll make better decisions about food the rest of the day!

Description

Ingredients
- 2 cups spinach
- 1 banana
- 1/2 cup frozen strawberries
- 1/2 cup frozen pineapple chunks
- 1 tablespoon ground flax seed
- 3/4 cup unsweetened vanilla almond milk
- 1/4 cup plain yogurt (I used Siggis)
- toppings: whatever you want, in the photo I used blueberries, raspberries, granola, kiwi and strawberries
Instructions
- Add spinach, banana, strawberries, pineapple, ground flax seed, almond milk and yogurt to a blender. Blend until smoothie.
- Pour into a bowl and top with whatever you’d like!
