Easy Apple Peanut Butter Energy Bites

Easy Apple Peanut Butter Energy Bites, a perfect after school snack for the kids or mid day pick me up on a busy workday. These Energy Bites are loaded with peanut butter and nutrients for one delicious bite!

When I was pregnant with Cason I had a slight addiction to peanut butter. It was the only thing that would settle my stomach in the mornings.

At times I could just eat peanut butter by the spoonful… and I did because well.. its peanut butter. Who doesn’t like peanut butter!

But most of the time I had it with a banana. As in, I had this every single morning for breakfast my entire pregnancy! I probably went through a tub of peanut butter all by myself once a week!! I was definitely a creature of habit, but it worked for me.

Even though I’m not pregnant now, my love for peanut butter has not subsided. I could still eat it with everything. But my new favorite snack has come out of my sons obsession.

Cason is in love with gala apples. He literally has two apples a day… it could be his dessert and he would be perfectly content! I love it!

But, there was a period of about a week where he didn’t want to have anything to do with them and because I didn’t want them to go bad I started eating them!

… With peanut butter! hehe

One day I decided to add raisins to my apple and peanut butter snack and OMG I was in love. Apples are like natures caffeine! Did you know that eating an apple is like the equivalent of drinking a cup of coffee to wake you up in the morning!

The chia seeds in this add a nice bit of nutrition and help fill you up, leaving these Apple Peanut Butter Energy Bites with 8 grams of protein and 4 g of fiber per serving!

If you’re looking for a healthy snack to eat during the day, an after school snack for the kids, or just something different to eat that adds good nutrition to your diet then this is it! If you’re not a peanut butter lover, any nut butter will do.

Description

These easy Apple Peanut Butter Energy Bites are a perfect after school snack for the kids or mid-day pick me up on a busy workday.


Ingredients

Scale
  • 1 apple, sliced (I used a gala apple)
  • 2 tablespoons peanut butter
  • 1/4 cup raisins
  • 1 teaspoon chia seeds

Instructions

  1. Slice an apple into 8-9 equal slices. (I use an apple slicer because it also removes the core)
  2. Top each slice with an equal amount of peanut butter, raisins, and chia seeds.
  3. Serve

    It’s so funny what pregnancy will do to our bodies. I ate the same things over and over again because my body didn’t want anything else! This little snack is something my family would happily eat any time of the day.

  10. I eat peanut butter in the morning too, because usually it’s the only thing that sounds good! I’ll have to dig my chia seeds out of the back of the pantry (don’t judge, haha!!)
