Balsamic Grilled Chicken Thighs topped with a fresh tomato Bruschetta

Balsamic Grilled Chicken Thighs topped with a fresh tomato Bruschetta. An easy 30 minute meal that will quickly become the ultimate grilling recipe you’ll want all summer!

As I’m sure you know, or have realized through all the recipes I post…

When summer comes around, I LIVE by the grill. It’s one of my favorite places to be. First off, it’s outside! Which is my jam. But there’s something special about the way food tastes when it hits the grill. How things char up and get that delightful smokey flavor.

And I know I’m not alone in this grill love affair. Everybody loves grilling season. I seriously believe that stoves are neglected as soon as spring starts to come around.

Fresh tomato Bruschetta in a bowl

One of my favorite things to grill besides an assortment of vegetables! YUM!

Is chicken thighs!

Now, you can buy them skin on or skin off … bone-in or boneless. I prefer bone-in and skin on. There’s far more flavor. Dark meat in general has more flavor than the chicken breast, plus crispy charred skin from the grill is the best. If you haven’t tried the skin yet I highly recommend it. It’s delicious!

One of the only brands I use for chicken, because I trust them and know what the brand represents, is Just BARE Chicken.

Just BARE stands by their promise of no antibiotics used in their chicken —ever (What does this mean? Just BARE chicken has never administered antibiotics at any point during the chicken’s life cycle, which differs from antibiotic-free chicken.) There are no added hormones and all the chicken are vegetable and grain fed.

Just BARE hand-trims their chicken and makes sure that it’s ready to cook right out of the package without unwanted fat. Which honestly, on busy days is huge. I hate having to trim off loads of fat from chicken breasts before cooking; it’s time consuming and makes me question the product. With Just BARE you don’t need to do that. I just season it and throw it on the grill or stove. Ah-mazing! Each package is traceable to family farms that provide the product. The package even has a unique traceability code, which can be found near the freshness date stamp after the words FAMILY FARM. You can literally enter the code on the Just BARE Trace Your Chicken page on their website and see which family farm the chicken came from. Isn’t that cool? Maybe I’m a nerd. But I think that’s awesome! Plus it just makes me feel good about the food I’m providing my family!

Balsamic Grilled Chicken Thighs

Once you have a dynamite product from the start add some dynamite flavor and let’s just say your tummy will be thanking you. Your body may even start doing the happy dance uncontrollably.

Side note. Do you do a little dance when you make something amazing to eat? Or is it just me?

Ok, so these Balsamic Grilled Chicken Thighs are not marinaded. I wanted to cut down on the prep time so I made a balsamic glaze instead. I grilled the chicken skin side first. Then, after I flipped the chicken over I started brushing them with the glaze to allow the chicken to soak up that balsamic flavor. I used about half of the mixture and saved the rest to drizzle on top right before devouring them. For the finishing touch I added a quick fresh tomato bruschetta mixture to the top.

This Balsamic Grilled Chicken Thighs topped with Bruschetta is a quick impressive meal that screams summer. You’ll love how all the flavors play off of each other. Happy Grilling Friends!

Bon Appetit!

Balsamic Chicken:

  • 2 lbs. Just BARE Bone-in Chicken Thighs
  • salt and pepper to season
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 teaspoon dijon mustard
  • salt to taste

  • 2 cups diced cherry tomatoes
  • 1/3 cup fresh basil, chiffon
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • salt to taste

  1. Preheat grill to 375-400 degrees F.
  2. To a small bowl add balsamic vinegar, olive oil, garlic clove, dijon mustard and salt to taste. Whisk all the ingredients together. Set aside.
  3. Pat Just BARE Bone-in Chicken Thighs dry, using a paper towel. Lightly season with salt and pepper.
  4. Spray grill grates with cooking spray or rub down with an canola oil soaked rag. Place chicken thighs skin side down on the grill. Cook for 5-6 minutes.
  5. Flip the chicken thighs (they should easily release from the grill, if not wait another minute to flip). Cook the other side for another 4-5 minutes.
  6. Brush the skin side of the chicken thighs with the balsamic glaze. (only using about half of the mixture) Close the lid and allow the glaze to soak into the chicken. Cook for 1-2 minutes.
  7. Remove the chicken from grill when the internal temperature is 165 degrees F.
  8. Set the chicken rest to allow juices to settle. About 2-3 minutes.
  9. In the meantime, make the tomato bruschetta by adding diced cherry tomatoes, fresh basil, garlic cloves, olive oil and salt to taste to a small bowl. Gently mix all the ingredients together.
  10. Serve the balsamic grilled chicken thighs with 1/3 cup of the fresh bruschetta mixture.
