Smashed Avocado Toast topped with a perfectly cooked Soft Boiled Egg (runny yolk included), cherry tomatoes, and roasted red pepper. Breakfast just got a facelift and you get to reap the rewards!
So I know some of you may think I’m this wonder woman in the kitchen. Let me tell you… I’m not. I’m trying to figure it out just like the rest of you. And I don’t have these amazing recipe ideas downloading from the heavens either.
I do have a bank of recipe ideas on my phone in the notes tab.. which makes me think. I probably need to save in another location, because if I lose that I’m screwed! Any who, every time I have a brilliant recipe idea I jot it down in my notes tab and then I use that tab when I need some inspiration or feeling like I’m in a “drought” for what to make. (and believe me, that does happen)
The other places I go to for inspiration are Pinterest (ahh… gasp) … you know, just to get the idea juice flowing. And then my favorite cooking magazines… Clean Eating. Food & Wine. Cooking Light. Bon Appetit. And sometimes Food Network.
Usually after looking at a few of those, ideas just come a flowing.
Well, todays recipe is inspired by one of those cooking magazines. I think it was Bon Appetit. They did a series on eggs and how to make the perfect hard boiled, over easy, sunny side up, and then soft boiled. I was intrigued by the soft boiled. They claimed that the PERFECT way was to boil it for 6 1/2 minutes and then put it in an ice bath immediately. Not a minute under (which will give you a runny egg white) and not a minute over because then it starts to cook the yolk.
Ya’ll. It totally worked and I’m officially in love with soft boiled eggs. It’s basically like a hard boiled egg with a firm egg white, but when you cut in the yolk is runny! It’s freakin delicious! And I may just start putting it on everything I make!
But for starters I figured I put it on a favorite of mine. Something I have for lunch almost every single day… Avocado Toast!
Toasted Bread topped with creamy avocado, juicy sweet tomatoes and then finished off with a soft boiled egg. Ya’ll. I guarantee you can’t beat that. Eat this for breakfast, lunch or dinner. I don’t care. Just eat it! You’ll fall in love! I even topped mine with a little spicy Harissa or Sriracha! Muah. Perfection!

Smashed Avocado Toast topped with a perfectly cooked Soft Boiled Egg and fresh veggies. This is one Avocado Toast you’ll devour!
Ingredients
- 4 slices of whole grain toast
- 4 avocado, mashed
- 1 roasted red pepper, sliced
- 1 cup cherry tomatoes halved
- 1/4 cup diced green onions
- 4 whole large eggs
- salt & pepper
Instructions
- Fill a medium saucepan with water, bring to a boil.
- Add whole eggs to boiling water using a slotted spoon. Cover and boil for 6 1/2 minutes. (not a minute under or over)
- Prepare a ice water bath for the eggs. After the 6 1/2 minutes is up. Immediately put them into the ice water bath. Let sit fore 3 minutes. Gently remove the shell. Set aside.
- Toast the bread.
- To assemble: place toast on a plate, top with 1/3 cup of avocado, handful of cherry tomatoes, roasted red pepper, 1 soft boiled egg, sprinkle with green onions and season with salt & pepper.
- Serve.
- {optional: top with sriracha sauce for a little heat}
