Nutritious Shaved Brussels Sprouts Harvest Salad filled with bacon, cranberries, and goat cheese then topped with a Hard Apple Cider Vinaigrette to spice things up!
Major cravings lately, and no I’m not pregnant!
The funny thing is, my cravings are for something I would have totally never guessed.
Brussels Sprouts!
I know weird right! Last week I posted a Brussels Sprouts recipe, but honestly, after that dish all I can think about are Brussels Sprouts and Bacon. Can you blame me!?
So when Marcie from Flavor the Moments sent out the Mystery Dish ingredients for this month I was stoked! Guess what one of the ingredients was?
Not sure?
Well.. I’ll tell you! Brussels Sprouts! {total fist pump action going on over here}
The rest of the ingredients she chose for this month were –> pork, fennel, kabocha squash, hard apple cider, heavy cream, orange, farro, hazelnuts, quince, thyme, maple syrup, brussels sprouts.
Definitely a hard list this time around, luckily I zeroed in on the last ingredient and built my dish from there!
I decided on making a Shaved Brussels Sprouts Salad … because … well .. I had never had one before and wanted one! But, I had no idea how to “shave” the Brussels Sprouts. Everything I looked up online said to use a mandolin.
Well.. I don’t have a mandolin. So… when all else fails just look on youtube! There it was in all its glory … “how to shave brussels sprouts”. Score!
It was easy peasy, just a little time consuming. All you do is cut the brussels sprout from the top to the bottom, flip the sprout so it is facing cut side down on the cutting board, and thinly slice the sprout so that it looks shaved. Viola!
Since Brussels Sprouts and Bacon went so well together last time I started my salad with those two ingredients, added in some goat cheese for a little creamy element, pecans for some crunch, dried cranberries for sweetness {plus they just seemed “fall-like” to me}, and some hardboiled eggs because well they just rock and I felt like it. 🙂
As soon as the hard apple cider vinaigrette got mixed in with all the other ingredients, I took the first bite and was immediately taken to Brussels Sprouts Salad heaven! This salad totally went beyond my biggest expectations, and Mike absolutely loved it!
On a side note, pretty sure that half my table at Thanksgiving is going to be covered in Brussels Sprouts because this salad will be on the menu too! I just can’t help myself. We might not even have Turkey … just Brussels Sprouts.
Is that ok?

This salad sounds so so good!! 🙂 I bet I could get my kids to eat it as long as I didn’t tell them it was Brussels Sprouts instead of lettuce! 😉
Thanks Joceyln! haha.. I so plan on doing that at thanksgiving too. 🙂 Best way to get kiddos to each veggies they normally wouldn’t!
Love B Sprout salads! I never would have thought to use hard cider in a dressing… brilliant!!!!
Thanks Chris! The hard cider is the bomb.com that amped this dressing up to a 12 out of 10.
This looks awesome Krista!! What is it about goat cheese that makes everything magical?? It’s a fact. This salad would be perfect for T-day! 🙂
I know right! I don’t know what I would do if I didn’t have goat cheese in my life, use it all the time! 🙂
I can’t wait to make this salad, and the hard apple cider vinaigrette sounds amazing! Pinned 🙂
Thanks Jenn! The dressing is amazing.. I actually had some left and used it on a wrap today. YUM!
I have cravings for Brussels sprouts, too, but that never would have happened about 10 year ago. I’ve learned to appreciate these little guys over time. This salad is so pretty and I love the sound of that vinaigrette.
haha.. I’m in the same boat girl! I finally pulled my big girl panties on, forgot about the “bad rap” brussels sprouts had when I was a kid, and finally tried them and now I love them! Makes me want to reach out and try those other foods I “thought” I didn’t like.
So glad you enjoyed the recipe pretty lady! 🙂
can you buy hard apple cider at grocery stores?
You can in texas, because you can buy beer and wine in the grocery store down here. I used angry orchard brand, thats our favorite!
ty I did not realize you meant liqour
yup. 🙂 hard apple cider is essentially fermented apples (so kinda like an apple beer) its delicious 🙂
Maybe if you and I hang out for a little bit you’ll convince me to like brussels sprouts 🙂 It would be fun!
haha… done! I would love to hang out with you and stuff brussels sprouts in yo face. hehe 🙂 And if you don’t like them still, more for me!
I think we should start a “craving brussels sprouts” club because I have the feeling a lot of people would want to join! I LOVE this salad, and that dressing! Uh, yum!
haha.. totally should! I agree, brussels sprouts are the new “cool kid” on the block!
This is such a clever dish Krista! I love the shaved brussels sprouts. I am making this for a lunch for myself this week for sure! Thanks for the inspiration!! 🙂
ohhh.. thanks so much Renee! Hope you like it as much as me and the hubbie did!
I’m with you on the brussels sprout thing — it’s addicting! And shaving them does take some elbow grease, but it’s so worth it (the mandolin thing doesn’t work too well either). I love all of these flavors, and using hard apple cider in the dressing was genius — gotta try that! 🙂
It is soooo worth it! I would be afraid that I would slice my fingers off with a mandolin, the sprouts are so small.
I’ve been craving Brussels too! Love them, especially shaved and raw for salads. The crunch is so perfect.
The crunch rocks, I’m all about different textures in a dish. 🙂 Yah for brussels sprouts lovers!
